  1. Lunch today was at a restaurant in San Sebastián outside of old town. Started with an assorted plate of sardines, anchovies, octopus and peppers in olive oil and moved on to grilled octopus and prawns with onions and green and red peppers We really liked this place. Very casual
  2. Dinner with friends in Oberageri Switzerland. Smoked chicken thighs not pictured with multiple sides, salad and cheese Preprandial cigar and spirits
  3. Well if the veg included collards or similar greens I'm on top of it 100%, no apology needed
  4. Group dinner. Brats, sauerkraut and a pork loin. Pasta dishes for vegans and non pork eaters
  5. Drinking and eating across the pond in Austria Tonight it was multiple cheeses and crusty bread followed by grilled chicken thighs, legs, grilled vegetables and dal in the comfort of the home of a gracious friend, in the company of many friends. Simple food done well. The whiskey and wine selections were fantastic. The food wonderful and satisfying. This is what my life is currently about. Will be back to reality too soon enough
  6. Thanks, I know they make aftermarket Shapton stones for the EdgePro but they didn't have them when I bought my glass stones
  7. Have you considered an equalibrium brine
  8. Simple toasted pita and muster cheese for breakfast this morning
  9. Cleaning out the fridge before heading across the pond. Tonights dinner was grocery store "fresh" pappardelle with 2 containers of grape tomatoes, mushrooms , garlic and basil
  10. Looks and sounds so good Shain.
  11. I've missed your amazing dishes Ann_T. They always look spectacular
  12. Nice find. If sealed well you have little chance of developing off flavors even if much older
  13. Pan seared amberjack with a side of blanched broccoli
  14. Amberjack pulled from the freezer. Now what to do with it?
  15. Picadillo with what I had on hand Yellow, red, orange and jalapeño peppers, diced tomatoes, garlic, onions and raisins with ground meat and cumin. Served over white rice
  16. Working on a picadillo dish. More to come
  17. Possible they had power issues
  18. Ready for lunch but it will be light and simple. Maybe PB with no J. We have a bunch in preparation of Irma. Spent much time in my yard and helped my neighbor cut and haul to the street 2 20-30 foot queen palms that fell in his yard missing his house by a couple feet. He told me the wind was blowing south when they fell. The direction towards my house. Yikes!!! Good thing gravity was in my favor
  19. I have a Bamix Gastro and it's a very good IB. Like it a lot
  20. From npr.org. http://www.npr.org/sections/thesalt/2017/09/11/548926054/can-you-really-not-clean-your-kitchen-sponge
  21. Very different
  22. Not much damage. Just no electricity for most
  23. Glad to be back. It was a briefly scary night. Really didn't know what to expect between big gusts and rain. We faired better than most. Taking a drive around the neighborhood revealed many big trees down. Lawns scattered with debris. Most without power. Outside of the debris we never lost power and no trees down except a smallish palm at a 45 degree angle. All my big oaks lost terminal branches which littered the lawn and bamboo leaves thick everywhere. Not my bamboos
  24. Had a tenderloin butt that had been languishing in the freezer for a long time. In anticipation of hurricane guests I thawed it out and grilled it then refrigerated it before they arrived. Made darn good sandwich material
  25. We are staying put but boy things are deterating fast as the storm is tracking west instead of east. Interstate is a road block and gas is in short supply . Cars are on the side of the road on Interstate 75 having run out of gas. Hunkering down and hoping for the best
