    Hey Nick I did notice how it firmed up over the week, so I can see were I maybe went over there. Have another belly coming this week, will pay closer attention to the firmness during the cure. Thanks for your help Shane

    Great to hear your feeling better RRO This thread has got me through some tough times, when eating/cooking wasn't much fun. Thank you for starting it First batch of bacon, 12 hrs cold smoked with apple wood and overnight rest Sliced Good but not perfect Made a few errors on this batch which was mainly not giving it a proper soak out after ther cure. Odered another belly today for round 2 Shane
  7. This was done for an end of the season event at work It was deboned,seasoned and stuffed with more shoulder, porchetta Fire started at 3am, pig loaded on at 4. Came off about 11 hrs later Went over very well The good,can take cook this off the "list", The bad, they want to do 2 or 3 of these next year Shane

  10. Yes, fresh shredded will give you the kick your looking for Once you try it with beef, it is hard to go back to store bought Even planted some this year It taste even better when you get your wife to shred it up, and then come in when it has rested for a while Shane

    Thanks Rotuts Here is a link some info, http://ruhlman.com/2009/03/duck-prosciutto/ really as simple as packing the breast in salt for 24hrs then rinse,pat dry, wrap in cheescloth and hang till firm Give it a try and let us know what you think Shane

    Hi Rotuts Sorry no finish pics. This was wrapped in foil and put in a cooler with towels for 5 hrs before I was able to serve it. Pulled apart super easy, still very moist and hot as heck Shane

    Hey Rotuts The Main is a few years old, I think he was 20 when he started that show, it was pretty good The pasta was homemade(in the recipe) and cut into 4x4 squares, mine were a little bigger Shane

    Wow!!!! Been busy here, but alway love catching up on this thread. Great meals everyone This is a favourite of ours and I was shocked to hear Chef Sedlak passed away this past summer at 28,very sad Here is a link to the full recipe http://www.foodnetwork.ca/recipes/ricotta-stuffed-cannelloni/recipevideo.html?dishid=8438 Started with some homemade ricotta style cheese Very easy, super tasty, and a real cost saver Can easily be done inside, but the Egg adds a hint of smoke which we enjoy I add a little more sauce and cheese than the recipe picture, but, the cannelloni are really under there Shane
