  4. A dear couple of friends many years ago gave me an apple tree. Poor couple. They wanted children. They tried and tried. Went to fertility clinics, nothing. Went to folk "medicine man", nothing. Same thing with the apple tree. Beautiful lush big tree, but not fruitful. Then one year, the tree was loaded with sweet crispy apples. And the wife got pregnant the same year. Be careful dcarch
  5. Don't worry about germs in sponges (for most people). Wash it once in a while. We really need some germs to improve our health. There are also studies linking sterile environment to obesity and allergies. At this point, our entire concept of modern health/medical care is to create weaker and weaker humans, and nastier and nastier germs. We spend (USA) each year $ 3,800,000,000,000.00 (nice profitable businesses) doing it. This $ does not even include all the sanitizers we use. I am alarmed to find sanitizer next to office building elevator up/down buttons. dcarch

  10. Speaking of dim sum. I was told that it really is supposed to be a breakfast thing. When I was in Hong Kong, the hotel was nearby a park. Every morning from my window, I saw a very typical Hong Kong thing, people exercising in the park: So beautiful. After exercising, then they would go and have dim sum. Is that still happening? dcarch

  17. Enjoying this thread immensely. Thank you. It has been a few years since when I was in HK. Lots of changes have taken place. Weekend is coming. The last time I was there I saw these unique HK scenes. Every weekend, you see these happening in many places. Is this still going on? dcarch
  18. I have had some dealings with a very well known big pulp manufacturer. I am sure you know them too. But let me tell you a 1/2 funny food related story, 1/2 paper related story. Had meetings with Parsons & Whittemore at their huge facilities in Perdue Hill Alabama. After a very tough day's meetings. I suggested to the fellows to go and have a nice dinner and some drinks. I was told, " Sorry, we don't have nice restaurants in Perdue Hill, and this is a dry town, no drinks." I asked, "Wow! what do you do if you want to have a special dinner and a few drinks to go with it?" "No problem. We just take a short drive to Florida." "Well, what are we waiting for? let's go." On my way to Parsons & Whittemore, I was amazed that the major highway was named after the owner, and on it there were endless convoys of huge tractor trailers nonstop 24/7 shipping timber to the pulp factory. I was amazed at the big sign in front of the factory , "THE WATER COMES OUT FROM OUR FACTORY IS CLEANER THEN WHEN IT COMES IN." Of all the manufacturing industries, paper making uses the most water. I was amazed at how much energy and chemicals are used in making paper. I am suggesting using cotton towel to the OP not because of the environment. I feel functionally cotton towels has advantages which makes them a good option. dcarch
  19. I agree totally. Paper (and plastics) is not really recyclable. They can only be "recycled" very few times. afterwards they have to be throw out and more trees will need to be killed. Not considering that, I buy shop towels from HD, by the hundreds. They are very durable, absorbent, soft , and very cheap. Just the right size and thickness for hand towels and kitchen towels. There will be money saved. Never have to buy paper towels. It really feels good to have cotton on your skin. Paper will always feel like paper and look like paper.. dcarch
  20. Food business has always been work and no money. You know that. Everything is expensive, and no one wants to pay you a fair amount for what you put in. It's all about promotion. Think David's Cookies. The guy is a great promoter. David's Cookies is now a 100 million $ business. I know a guy (forgot his name) who was a computer programmer. Never cooked or baked. One days he made a sweet potato cheese cake, promoted it, got on TV shows. He made a huge amount of money having someone else making the cheese cakes and selling them. Good luck to you. A video is a great idea. Have you looked into female minority help? dcarch

    Cleaning leeks

    This? ' (Googled Image) dcarch
  22. I don't get it. It takes a lot of work and time to make sliced egg tube. You end up with sliced eggs less attractive than sliced regular hard boiled eggs. dcarch

    Cleaning leeks

To get long white leek stems, farmers pile dirt up high to blanch. Therefore you will always have plenty of dirt. There are dirtless leeks grown hydroponically. dcarch
  24. Isn't it true that a commercial dishwasher needs higher water temperature? (180F ?) Domestic hot water is about 140F. dcarch
  25. Here is the solution: If I have the space, I would have two dishwashers in the kitchen. One for dirty and one for cleaned. Added benefit - if one is broken, you will not be in serious trouble. dcarch
