1. I am not sure you can actually melt lardo. You can get it to go very soft (if it is thin enough), but not melt like butter. 2. A heat gun is very hot. I don't think for what you need, you want it to be torch hot. dcarch

I like stainless steel. You can use "Easy-Off" on S.S. Only way you can clean the grease built up. dcarch

If you use a laser point, you will see that all splatter screens allow oil droplets through. It all depends on how small the perforations are. Using very small perforation screens also creates a steaming cooking environment. dcarch

by coincidence, like LuiZhou, I also made Malabar Spinach and fish. Picked malabar spinach and tomato from my garden. Malabar done two ways, cooked and raw with tomato salad. With catfish sauteed in tamarind and calamondin orange sauce. dcarch

I have about 80 plants, they are about 7' tall also. I use my "invisible staking system". It is working out nicely. Tomatoes are doing well. A box of 30 lbs going to a friend. dcarch

A dear couple of friends many years ago gave me an apple tree. Poor couple. They wanted children. They tried and tried. Went to fertility clinics, nothing. Went to folk "medicine man", nothing. Same thing with the apple tree. Beautiful lush big tree, but not fruitful. Then one year, the tree was loaded with sweet crispy apples. And the wife got pregnant the same year. Be careful dcarch

Don't worry about germs in sponges (for most people). Wash it once in a while. We really need some germs to improve our health. There are also studies linking sterile environment to obesity and allergies. At this point, our entire concept of modern health/medical care is to create weaker and weaker humans, and nastier and nastier germs. We spend (USA) each year $ 3,800,000,000,000.00 (nice profitable businesses) doing it. This $ does not even include all the sanitizers we use. I am alarmed to find sanitizer next to office building elevator up/down buttons. dcarch

Speaking of dim sum. I was told that it really is supposed to be a breakfast thing. When I was in Hong Kong, the hotel was nearby a park. Every morning from my window, I saw a very typical Hong Kong thing, people exercising in the park: So beautiful. After exercising, then they would go and have dim sum. Is that still happening? dcarch
