I spray them with Pam and put them on medium heat for a few minutes, add the oil and then raise the heat to high medium or hot.

Recently Ralphs in Los Angeles was fined something like $67,000 for overcharging customers by not subtracting the package weight when weighing products and charging for the ice which was clinging to frozen fish, etc. $67,000 is like petty cash to Ralphs. If the fine had been $670,000 it would have gotten Ralphs attention. If I'm not mistaken, Whole Foods has come under fire for the problem you indicated. Their cashiers are supposed to be trained to know every item in the store and what you did was absolutely correct. If it happens more than once you should ask for the manager and ask for the number of the corporate office and tell them why you want it. That will perk them up.

SurLaTable.com has the 8qt. Le Creuset Stock Pot which is normally $75 on sale for $55. Got the e-mail announcing the sale today.

I have seen either the All Clad or Le Creuset 8 qt. stock pot on sale for about $100 at either SurLaTable.com or Chefs.com. Comes in different colors,

I get no sludge at the bottom of the cup. By the way, Keurig told me that you should replace the baskets every six months or so. I don't believe that for one minute. I put mine in the dishwasher every so often and they are as good as new.

I use a Turkish grind, which is very fine, in the "My K-Cup" and find that the coffee is fine. I have not tried a coarser grind in it yet.

60+ years ago, when I was a kid, people burned trash in incinerators, One day I went to the incinerator in our complex with some trash and I noticed a box there waiting to be thrown in the flames. In it were ten small hard cover books titled, "The Worlds Great Orations" William Jennings Bryan Editor=In-Chief, copyright 1906. I still have them.

Cooking with "Stir-frying to the Sky's Edge" (Grace Young)
mbhank replied to a topic in China: Cooking & Baking
I agree with Ben Hong. This is the only Chinese cookbook I have seen which uses cumin in a recipe. It stood out to me because I cannot stand neither the taste nor the smell of cumin. Between "Stir Frying To The Shy's Edge" and "The Breath of the Wok" I think the latter may be the better book. The recipes in "Breath..." may be a bit more authentic, made mainly by her family and friends. -
Cooking with "Stir-frying to the Sky's Edge" (Grace Young)

I think Grace is Cantonese therefore her recipes will be on the mild side. I will usually add heat to Cantonese dishes myself. -
Irene Kuo's "The Key To Chinese Cooking" is a classic which should be on every Chinese cooking chef's bookshelf. Martin Yan's and Ken Hom's excellent books are based mainly on stir frying.

Cooking with "Stir-frying to the Sky's Edge" (Grace Young)
mbhank replied to a topic in China: Cooking & Baking
I love Grace Young's books and have all of them...I think. I have cooked one thing out of Sky's Edge and I know I liked it but I made it when the book first came out and I don't remember which one it is. Right now the book is on loan to my Podiatrist and I'll have it back in a couple of weeks. Her recipes are understated as they probably are in China but they are excellent. I don't think there was one I didn't like in Breath of a Wok. BTW - Ming Tsais new book Ming's One Pot Meals looks very good. -

Yes, Chinese chefs will often chop meat very fine while using two cleavers, but one in each hand.

Looks like teaforia has closed, phone is no longer in service.

Hi, Where is Treforia in Torrance? Thanks in advance. Hank
-
Hey, we're neighbors. I live in Torrance. Where do you work? Tea Habitat had a store in Palos Verdes but they closed it for lack of business. There are no local tea shops per say except that Whole Foods in the El Segundo Marketplace has a large selection of teas. If you want to backchannel me your e-mail address I'll send you a list of on line tea sources. Mine is UCLAHank(at)gmail(dot)com Hank

Hi, Here's another one with a large selection. It's new to me and I haven't had a chance to look at it much yet: www.TeaTrekker.com I just got an e-mail from www.JingTea.com The main thrust this month is on Wuyi Oolongs. They are in Great Britain.

Hi, www.InPursuitofTea.com Has some of the best teas around. A bit on the high side, but excellent. www.svtea.com Simpson and Vail has an excellent selection. One of my favorites is their Cream Assam. www.UptonTea.com Here is the best way to try all kinds of teas at a reasonable price. They have a huge selection of teas and you can order a small sample of almost every tea in the catalog for a dollar or two. I have often ordered thirty or so different samples to try. Their catalog makes great reading. www.Adagio.com Again, large selection at reasonable prices. Some excellent blends here. www.TeaHabitat.com Some very high end Oolongs from ancient trees hundreds of years old. I bought one of their orchid oolongs a few months ago and it is a beautiful tea. I have a lot more sites. Let me know if you would like them. Regards, Hank
