  2. I tried today to make kellers marinated tomatoes. I had a very tough time vacpacking the bag with the tomatoes and the syrup, does anyone have any advice while sealing foods with liquid?

  5. To be honest I haven't seen it yet with the sous vide kit as its on its way right now, it was just a boiling pot with some vacpacked veggies inside. Maybe the water boiling made them move up as I had it on high. I am using a 18l rubbermaid container http://www.nisbets.co.uk/Rubbermaid-Space-Saver-Container/J875/ProductDetail.raction if someone can suggest a rack. I was actually thinking to buy some marbles or use something I dont really need (like coins?) and double vac pack them in a small bag and make a small pouch of coins and put it inside the bag with the food.   7. Well one question which seems to come up for me is what do I do in order to stop my bags reaching the top of my waterbath? I have the vac pack machine now, and I am trying to boil some veggies in a pot of water and the bag seems to be floating at the top all the time.

The ones I can find on ebay range from cheap to expensive, I don't mind spending money for something better, but I would rather not. I am cooking dinner for a friendly couple and a girl I like on the 28th. I am going to make keller's marinated tomatoes in syrup, chicken breast, glazed carrots and mashed potato, and for the vegetarian i am making sv aubergine/eggplant finished with manouri cheese in the oven.

  11. yes but with a steak, we are measuring the thickness on the small side, not how long the steak is.
  12. I have decided to order the freshmealsolutions kit, but since I am in the uk the airpump will not be included. From what I understand any cheap aquarium air pump will be fine and I place the hose under the heating element? Also, can someone recommend a vacuum sealer for home? and on cooking questions now: I have bought the sous vide dash app, and since I ve been seeing this a lot here, I understand that the thickness of what we are cooking is part of the calculation. If I have a whole piece of meat lets say 2-3 kilos the thickness is measured regarding how thick it is. If that piece is a lets say a loin, and I cut chops/steaks out of it, the thickness is measured on the other side now?

  14. Hello, I have tried the beluga lentils from merchant gourmet, and I really really like them. Where can I get them raw? There seems to be a conflict of what they are, wikipedia says they are this: http://en.wikipedia.org/wiki/Urad_bean but it says "not to be confused with the much smaller true black lentil (Lens culinaris)" which actually links back to the lentils. http://www.foodsubs.com/Lentils.html mentions they are just beluga lentils So what are they and where I could find them online?

It comes with a Cambro polycarbonite tank, but you could use it with anything. It works best with a tank that is taller than it is wide, and has been used with some monsters -- I think 50 liters or more. For non-commercial use within the US, they recommend the 110 v version with the air pump, but the 220 version will also work -- you might have to find a 220v pump, however, or buy a transformer, or do without the circulation and just rely on convection. Ι am in europe, that's why I linked the 220v one. I think I will go for this one then! Thank you very much.

  19. Hello all. I am thinking into buying some sous vide equipment for my home. Is the sous vide supreme (or the demi) the way to go even now? I would actually like something more similar to the polyscience circulator but the price is not within my reach, and I have found this one: http://www.sousvidetools.com/sous-vide-chef-thermal-circulator I know that its more expensive than the svs, but my kitchen is not that big and I really love the idea that it is portable and I could actually visit my family next time and cook for them with this. What do you think?
