  1. source This guys solution appears to be not using grain but using food crop byproduct to produce bio fuels. Makes sense to me. Bio Fuels are really only economical to produce in the US and EU because of farm subsidies. Elsewhere they they make economic sense because those people can't afford oil. Other sources I've heard of recently would be some kind of algae and some drought resistant plant called jatropha. I think the problem in the US is ethanol. Right now it's part of some program to combat global warming. So right now it's just a fuel additive. You think a loaf of bread costs a lot now wait till they start fueling cars with it. The best example of Bio Fuels use would be Brazil. Practically their entire sugar production goes for ethanol. They stopped exporting sugar and the price doubled. They are also developing Bio Diesel from soybeans. When that stuff burns it smells like popcorn. I think that alone would be a good enough reason not to use it.
  2. Interesting industry. According to Wikipedia The highest price ever paid for one was $120,000. I think the alarm has been sounding about their decline since the late 70's among other fish stocks. I remember seeing a documentary that showed one Bluefin being auctioned in Japan from the deck of a tuna boat thousands of miles away. Damn thing went for $26,000. From what I understand you don't fish for Bluefin it's more like winning the lottery while fishing for other fish. I also understand captured Bluefin are also fattened outside the Mediterranean. Nova Scotia for one comes to mind. I think Japan is the only country that tries to raise them as opposed to just fattening them. Your best chance of catching one would be off the waters of Cape Verde. Island nation remotely located in the Atlantic off the West coast of Africa. One of the poorest places on Earth with an undeveloped Fishing industry. Bluefin travel the open Ocean but for some reason Cape Verde sees more than their share. Maybe they spawn there. I don't know why their waters are not plundered by other nations but I understand their economic zone is respected. I only know about Cape Verde because of friends that do research their. Recent documentary on commercial fishing would be The History Channel's, “Modern Marvels: Commercial Fishing”. Fascinating what they are doing with net technology to help ensure fish stocks.
  3. Which ones are the wanted bacteria?
  4. I envy you. If you can spend one 1/2 hour a day absorbing the culinary arts imagine the skills and knowledge you will have at age 17. If I could recommend one other skill set to pursue I'd say learn a different language or three. Among broadening your ability to communicate it seems to me you acquire "a thinking outside the box" kinda thingy. Even if you just scratch the surface. If I could recommend two I would add psychology. Not so much as major in it but understand it. I think you can gain tremendous insight about what makes a person "tic", how their mood could influence a situation by doing this. In what ever endeavor you pursue you will probably need to deal with people. Above all else when you take on a responsibility show up, show up a little early. If the bus driver's are on strike walk. If your running late let who ever is suppose to know, know as soon as you know. Dependability goes with professionalism. Your word is your bond, your actions speak beyond what words can convey.
  5. Graphix Dewd you rock! edited to add exclamation point.
  6. They do they just screwed that one up.
  7. Audio, Meet the writer: Bourdain.
  8. Yikes hard man to track down 12/11/07 2:00 PM at the Free Library of Philadelphia – Vine Street. Philadelphia, PA. 12/15/07 7:00 PM at Barnes & Noble – Greenwich Street. New York, NY. I really hope B&N keeps webcasting stuff like this.
  9. I gotta thank you guys. I feel like I'm attending a seminar on how to write.
  10. Sounds like a theme for a new fastfood chain. Probably be good too.
  11. I think there is more than enough material in this thread for a Doctoral Thesis. Maybe three. Interesting article on the whole Taste of Heaven thing. I've heard a few stories from Chicago Police officers about fights breaking out when one patron suggests another control their offspring. How sad is that? You can't control your kid and end up assaulting someone who suggests you do.
  12. Think about cooking like professional football. Many play but very few make a decent living at it. You may be thinking "yeah I want to work at a really great restaurant!" Divide the number of places you don't want to work at by the number of places you do want to work at and think about that. A cook at a hospital makes more money than many cooks at upscale restaurants.
  13. Worth a chuckle. Web cast from Barnes and Noble. I think Ruhlman plays an excellent straight man to Bourdain's...well I don't even think there is one word to describe Bourdain.
  14. Wow, Helen--what generosity of spirit! Really lovely. (And I'm confident that everything you made was the farthest thing from horrible.) ← Wow you are a saint. Did the mother in law ever offer to teach you to cook? Maybe show up and help? Personally I don't think I would want her help.
  15. The man does do a fair amount of fund raising I'll give him that.
  16. Some high school student here in Chicago did a similar study maybe two years ago. The results sound roughly the same. She also tested bathroom sinks and I think toilets. I remember it being on the television news. They asked a couple of employees at one of the fast food places how often the ice dispenser is sanitized? The look on their faces was like never. I've seen the self serve ice machines at fast food places filled by hand from a bucket. Now that you mention it I wonder what else they use that bucket for. Wouldn't be too alarmed by this. I'm guessing this has been the case ever since there were ice machines. Be interesting to test door knobs in your own home for bacteria. When was the last time you cleaned your own door knob? In public I tend to avoid using a door knob, handle whatever. I think my grand mother got me doing that. I'm probably the obsessive one about this. She worked as a nurse bringing up six kids and probably didn't want to bring her work home with her.
  17. Does beef roast very well. Fix it and forget it is basically just the timer. I usually follow the time tables that came with the instructions. Most juices that result from piercing the roast tend to baste the the roast as it turns resulting in an excellent crust. I can't remember ever ending up with a dry roast.
  18. Off the top of my head I would think the relationships with customers outside of the business would be interesting. After waiting tables at different restaurants, from pubs to to upscale I find I have casual friends that number in the hundreds. Something about food and people leave lasting impressions. All of a sudden you get services like tax accounting and plumbing at reduced rates.
  19. I would of never thought of an ax as a cooking implement, I am asking for one for xmass. Back on topic I picked up a butternut squash which came with recipe label. One suggestion was to fill the cavity with cooked sausage. I never would of thought of filling one with meat but will be going for it. Any one have any suggestions?
  20. I would think organic farming would be the best opportunity for a farm worker. Saw an add that offered room and board, year round work but the compensation $8,000. I wonder how many other farm workers have $8K as disposable income.
  21. from the article: Wow I had no idea. I gotta start reading the papers again. I have worked with former migrant workers. Fascinating sub culture going on there. If a farmer pays and or treats their workers too well they may suffer retribution from other growers. Even harassment by government agencies. Migrants themselves form and manage crews. If you own a truck that can transport workers you become a boss and are paid more. This works well for unethical growers because it is the boss he contracted with abusing the workers. The most common injury among farm workers is infected insects bites. Some of these guys told us about sleeping out in the fields. Not even tents. There is also migrant on migrant crime. Sabotaging others trucks so they can't compete. Turf wars as in "we" work this area not you. Stuff like a body found in an orchard maybe a week old. Try and track down the crew that worked there a week ago.
  22. These people will give you a look at being a farm laborer. Haven't been there in a while and it can be quite biased but you do get a look into an industry I at least rarely think about. Old Victor Chavez organized a boycott of California grapes back in the early 70's. I liked grapes but mom said we aint buying any for a while. I'm pretty sure by the late 70's union migrant farm workers in California were earning close to $8 dollars an hour and got things like portable toilets out there in the fields with them. I don't know about you but I sleep better at night knowing there are portable toilets in the fields my lettuce comes from.
  23. One typo: As far as driving people to the website you may want to look into Search Engine Optimization (SEO). May want to consider Google Adds as in you pay google to to put a sponsored link on their search pages relevant to your site. Can be costly but you can control those costs as in they turn off when you have reached your budget. Promoting you site via the web can take up more time than adding content. You could post about your "New Lunch Tenderloin of Prime Canadian Beef 'Bourguignon'" on websites with a link to that specific article which in theory should drive up your page rank on google and many other search engines. An important point about this would be linking to that article and not your homepage. The "key words" should be relevant to the page the link was created on. edited to add quote code
