ok, the correct spellnig is "malee". so if any of the admins want to change the title, that would be great. yea. and if you could go ahead and come in on sunday, ya see, we need to sort of play "catch-up". yea. i gave this place a shot tonite. tom yung koong (goong) - pretty damned good. could have used some more mushrooms and cilantro. the flavor of the broth was right on. i generally use this dish as a baseline for any thai restaurant. and if you find yourself choking after the 2nd or 3rd sip, it's spot on. yes, i choked. ground chicken and mung bean noodle soup - i don't see this often, but since i love mung bean noodle, i have to order it. this version was very good, and at 2.95 one of the least expensive things on the menu. chicken larb - a very good rendition of this dish, although it lacked enough ground rice, so that crunchy texture was missing. but, the dish did have *some*. chicken with basil/peppers - a standard dish at most restaurants. pretty good here. not too gloppy and sweet. nice fried basil. 35 bucks before tip. my only complaint is that we ordered everything "extra spicy," or whatever the hottest is on the menu. for the most part, the dishes weren't spicy enough. although i'm sure they are dumbing down the spice for the uptight ridgewood set. i would say that if you live closer to wondee's certainly go to wondee's (hackensack). however, ridgewood welcomes this place. now ridgewood actually has a vietnamese restaurant *and* a thai restaurant. no one thought this would ever happen just a few months ago. their only competition in town is kailish, an indian and thai restaurant, which a very limited thai menu (but one helluva roasted duck dish that is just brilliant) byob. open everyday except mondays for lunch and dinner.

i was driving around ridgewood last week and noticed a new thai place on east ridgewood ave, next to the train station. anyone been? this is certainly good news for ridgewood, as long as the place is decent. the menu seems more limited than the average thai menu, and the prices are certainly "ridgewood prices." hopefully, the food is good. it's right next to Latour by the train station.

as far as what i'm doing, it's "pizza place bought dough". i'm not making my own. i brought it down from fridge temp for about 20 mins before working it. also, why not cook the sauce? i'm seeing a lot of suggestions of "raw" sauce, but what does that buy you? i'm cooking a nice flavorful sauce, free of water. what can be wrong with that? still confused.

mynamejoe, no pin. it has been suggested that by hand is the best method, so share the hand method if you have one. to clarify, this is pizza place bought dough. i assume it's ready to go. johnjohn, i did cook the sauce. a simple tomato sauce. canned whole tomatoes, garlic, onions (sweated), dried oregano and basil, s/p, olive oil, cooked and put through a mill. i wanted to get it as thick as possible so as not to add much liquid to the toppings.

yaaaaay! i tried again, with better results than the last few (for all of you at home keeping score). the crust wasn't as thin as i would have liked, but it was crispy, just like i like it. mushrooms, fresh basil, fresh tomato, and hot peppers. any thoughts on how to get that dough thinner? i worked it for quite some time, taking breaks even. however, i didn't have the time [impatient to a fault] and strive for immediate gratification[premature ejaculator]. tips anyone?

that's more like it. considering the market isn't exactly flooded, if i were to open that business, i'd copy little saigon down to the letter. it's a successful business, so they're stupid to not. ugh. it also occurs to me that some people just aren't as good at cooking. god knows there are plenty of bad to mediocre restaurants out there. but i always expect places like this to be different in that regard. maybe i'm too demanding. maybe i'm starving and want pho.

i'm totally craving vietnamese as well. damn you people. 201, i often think that if they don't know enough to serve the "proper", or perhaps a better word is "usual," stuff with the pho, how much can you possibly tell them? it's as if they're clueless.

now that i think about it, nutley is 15 minutes from me. i need a pretty big reason to not go to nutley for pho. hey, maybe this place has good hamburgers?

i brewed a couple of times years ago. does that make me a "homebrewer"? i still have 2 bottles of the belgian white that i made. i have to say, it was quite good. brewing beer is very satisfying. you can really get some great beer out of it. i've found that wives are generally not big fans of the brewing process, especially when you live in a one bedroom apartment.

to echo jason's sentiment, if the pho sucks, the place sucks. i order pho every time i go to a vietnamese.

it's a tradition in ridgewood. has been there for years. and it's one of about 3 bars in ridgewood, so people go back for more. they have outside sidewalk seating in the summer. the food is generic pub-grub i'd say, although they probably do a few things well, which would explain while people return. the smoky bar area is a nice change from the generic "office" around the corner. the customers at the bar seem to hail from somewhere besides ridgewood. i'm not sure what that means.
