  4. The show is what they show. I can't understand Rocco doing this thing. (Well, I can, but I'd like to like Rocco so it the thing keeps jarring.) I can understand BOH people wanting to work with him or at least in a place where it seemed he was following a dream, the food and place the mainfestation of that dream. I can understand BOH walking out. DPadrona, I saw you in a few shots early in the show and you were one of the few people who seemed to be doing the job.
  5. DPadrona, sadly, that's what I thought. "When you turn the chicken, salt and pepper it." Wow!?! I hope you've found a good spot. Yes, eGullet is great, isn't it? Continually surprises.
  6. I often serve bulgogi and kalbi with tabletop grills and people love it. It allows each person to get the kind of beef they deserve. Inattentive? Well done. Too bad. Pay attention. No, seriously. It allows each person to get exactly what they want, how they want it. Grilling whole steaks on the other hand is a different matter. Instead of seconds spent grilling the next piece in between eating the last, one is left just hanging around.

  9. DPadrona, welcome. Can you tell us anything about the scene's where Rocco worked for a living and cooked a few plates? The line was shown frozen in awe before the sheer majesty of the moment. What actually happened?

    Well, the latkes would go wonderfully. Perhaps also fry some grated cabbage with chiles and then add a bit of diced tomato.

    Saute in butter & rosemary? Hmmmm.... Yes. Then remove ham, add shallots and bit of wine, season. Then mount with a bit of cold butter.
  13. Yes, it's easy. Dry the fish well with paper towel. Run the back of the knife on the skin to squeegee out morte moisture. Rub with EVOO or butter, salt well. Bung into pan. Leave it for a good two to three minutes.

  22. By the way, it's hard to tell with the editing but I thought that Bourdain and Ripert had a sequence of dishes of which Tony said, in order: "This is great." "This is great." "I dislike this but I respect them for making the effort." (Or something like that.) "This blows." And then: "This utterly blows." So it looked like the dishes marked a descent into hell. I wonder what dish "utterly blew"?
  23. Bux, I don't think anyone will take Rocco seriously as a chef again. Because he's not taking the food seriously. And he's not good at anything else. When he was "trailing" the captain, he was a horrible waiter. In fact he didn't wait tables. He schmoozed them, then forgot to place the orders. And he doesn't even seem to schmooze well. He doesn't seem to understand anyone else's perspective and egregiously ignores their intentions and meanings. Honestly, I think he's doing too much coke. He has flat, dead junky eyes. If he goes back to the food, back to what he was good at, he could earn respect once more. But otherwise he's lost all credibility as a chef. And that's sad. Still, he might wind up with his face on frozen boxes of Mama's Meatballs and jars of Rocco's Ragu. Which is what I think he sees when he looks in the mirror, darkly. If this is what he wants, may he be happy. But he'll get no respect.
