  3. Maybe you like to try L'Atelier de Joel Robuchon, i have only tryed his new place in London was good and also expensive.   4. Ok mad it today and it also went perfect think i'm in a good desert week normally i don't really like to make desert since i don't have a sweet tooth . But this is good sh*t.. 270 gram egg yolks 180 gram sugar 1200 ml coconut milk slowly reduced to 900ml half sugar with egg and other half with the coconut milk.. Added 1 tablespoon of home ginger confit.. Wish i cut share taste over the net

Do you go to several different grocery stores? yes i go to 2 Asia shops, 1 Biologic shop, 1 supermarket , 2 bakers then 1-2 times a month i drive 2 other special Asia shops and a special butcher. i also get delivered vegetables, fish and meat everyday from farmhouses. oo almost forgot i have 2 of the best cheese shops.. Do you clip coupons? Nope What do you usually buy at the grocery store? nothing usually Do you tend to buy more meat or more produce? Mostly fish Are you too ashamed to make purchases from the "reject bin?" i dont Do you make a list? yes How many refridgerators and pantries do you have for food storage? 2 big ones and one regular little one Do you enjoy grocery shopping as much as I do? Not always

  7. But i totally agree that food shall not touch each other on a plate.

If they were all in a cassoulet it would be no problem but if the beans were seasoned with a flavor that I considered not to be complimentary to the duck and sausage and would not want them to touch. For example a Brazilian style black bean stew and Bratwurst would never be on the same plate. ← Nope that is why it is served with Flesh..
  9. I made a lime Panacota today with coconut milk, and it was absolutly super 800ml coconut milk 110 gram sukker 3 gram agar 2 lime's So i will try to a creme brulle on Thursday

Hey i Just like to post some photos and stuff about this years Salone del Gusto, Well it was very interesting being there, lots of very lovely products and very good workshops but but not enough workshops almost everything was sold out in jun. I also had the thought that where more shows with chefs or demonstrations of different products. Most of all i enjoyed was the Terra Madre, it is super good to get the focus on how food is being handled and looked at around the world. I wanted to have posted some pictures but the internet here is very slow, so it will wait until iget home later.

  14. I havent been to any good French places in Amsterdam yet, an d i havent seen any cassoulet in holland at all only in my own kitchen.. But yes try try to ask Arno A.C Veenhof from Fred De Leeuw Butcher in Utrechtstraat.. Else next time just ask and i'll come and make one
  15. I'm sorry but how come, when i make Tofu it dosent skin at all?
  16. Yes a Miso soup with a little twist of lemon juice inside and seasam seeds and a green sancha tea on the side. That helps. Just dont sit in the yakitori bar or some place they grill / fry salmon.
  17. I know i 'm damn late out, but i was wondering if anyone know of a super place to go dine in Torino this weekend probably everything is booked already. But i'm looking for something local big Italian momma cooking simple super food. I'll be going to this Salone Del gusto tomorrow, hope it will be good since it is the first time for there.
  18. woow what allot of nice feedback, it sounds like i'm best of with a Japanese friend there. I know a Japanese Chef going home to Kyoto for Christmas, maybe it's best to take contact with him , i just don't wanna be a leech, and then only go to Kyoto for this time. Also when i asked for gourmet tours, i didn't mean like big groups, more like they give some advice to what is possible in the different area's.

  21. Hey all, My first post here so be nice to me Well i'm about to plan a trip to Japan, but i need some help. Maybe some of you knows some good links for travel agencies that specialize in gourmet tour's in Asia, Japan. Two places i realy like to go is Kyoto and Tokyo, but this only becouse that is almost places i know.
