Your Daily Sweets: What Are You Making and Baking? (2017 – )
lemniscate replied to a topic in Pastry & Baking
@Tropicalsenior"That sounds exactly what I have been looking for. I would be very interested to know how it turns out. Please let me know." I don't know what this cake was supposed to be but it's not poundcake. It's dense, moist and didn't rise. It's like a pudding cake, spoonable barely sliceable. Now that I look at the pic on the website, it looked like a baked pudding, not cake. Flavors OK. But it's not poundcake by any stretch. And I didn't soak it with the syrup either. -

I am getting started on some Holiday cooking while using up existing "forgotten" stuff in the freezer. I found a package of a mixed citrus jam and decided to use that in a poundcake recipe. I like to make mini loaf cakes for flexibility. Grapefruit Poundcake (cooking for two) sounded close to what I wanted to do. It's in the oven now. We'll see. What drove me a bit nuts about the write up is it's "cooking for two" yet makes 4 cakes. And at the end it says the leftover cake will keep for 1 day in the refrigerator. Apparently the recipe writer considers 1 of the mini loaf a portion per person per day. -
I will never again use guar gum to tighten up lemon curd. Gooey mess. Can it be salvaged to pie filling by mixing in evaporated milk? Or ???????

Glad I saw you mention this again. I want some of that. I bought quite a few bottles of the TJ's Vintage Ale, a spiced Belgian dark (Unibroue). That dip looks like it was made for paring with it.

Put it in the dehydrator and see what happens! For science.

I usually buy what Costco calls "Hot Buys" in the few days between expiration of old coupon book to new coupon book. The "Hot Buys" are inevitably cryopack pork loin (which I make into back bacon), pork shoulder (which I do as pork SV in differing flavorings) and just recently pork belly (which turned into green bacon). We have done the beef filet that's packed cryo'd for Holiday dinners. I'm also pretty sure baby back ribs were offered at special and I bought them sometime in the last year. I've been pretty happy with those, even though pork-heavy. It puts stuff in the freezer for easier meal planning. The Costco Business has a large room of cryo'd primals for restaurants. That's a sight to behold.

Enjoy!

Costco had the Creami for 159.99 including 4 of the containers.

Maraschino cherries. Pretty to look at but ruins a drink instantly IMHO. Even a Shirley Temple, which was my first intro to the cursed things.

Truffles.

Do you think the "aftertaste" was the kefir or the fruit? My homemade kefir doesn't taste like the supermarket kefir, it's funkier and thinner consistency. It sure tasted like a tangy buttermilk in my Oladi. But I didn't detect any funkiness at all, which I was a bit surprised about. -

I imagine that would be a good variation. Please give it a go. -
These. Whole Foods has them. I also bought the Yukon Gold frozen ones, but left them with another household for their air fryer. There's a Crispy Rosemary Fries that I thought about but didn't buy. I may pick those up later. FYI, the Crinkles don't get very brown but they do get crispy.

I've been re-awakening my kefir grains for the past few weeks. I got behind using it and found I had a very strong batch. I found a recipe for Oladi- aka kefir pancakes. They sounded reasonable and readily thrown together with pantry staples. Very nice! I made a half batch but forgot to lessen the sugar and vanilla. I liked the flavoring no matter. They have an underlying tanginess from the kefir but the vanilla/sweet balances nicely. They puffed up so nicely. They were devoured as they were removed from the pan with our after dinner beer, which was TJ's 2022 Vintage Spiced Ale. Sorry, no pics, but mine did look like the ones on the website. -
Honestly, I think it takes 4 stomachs to ruminate stupid kale.

NO eggs of any kind in my normal Costco today. Employee said they sold out of all eggs yesterday. I texted a friend on the extreme other side of Valley and she reported same, also stated Sam's Club had no eggs. I found eggs easily at Trader Joe's, normal large $2.99 doz. Not sure what's going on with the local Warehouse clubs around here this week.

Packaged, Refrigerated Biscuit (aka "Whomp" Biscuits) and Other Doughs

Even though I will use the biscuit version whomps very occasionally for biscuit sandwiches, I am also the only one at the Thanksgiving table who will refuse the whomp crescent rolls. Never been a fan of those for some reason. I'd much prefer a Parker House or potato dinner roll instead. But I am outvoted by a landslide every year. -
Pics of the the unruly Pom bush. After harvest and the birds are done (see the pic with the split open fruit the birds have stripped clean) with their portions, it will go dormant. Then it will get a severe pruning. It is intertwined with an equally unruly lemon tree, a monster honeysuckle vine and a seedless grape vine. Some of the Poms are huge this year.

This article just looks like a re-work of the old played out internet meme "nailed it" from a decade ago. There is truly nothing new under the sun.

Thanks to those who recommended the Alexia brand frozen fries. We were pretty pleased with the crinkle version in the air fryer.

I whomped some honey butter versions today to use as buns for ground bison sliders. Surprisingly good for that use. -
So yes, those are pomegranates. I have a 20+ year old bush that is 20+ feet tall. The purple bucket contains the empty-ish husks of the fruit. I use the "beat on the drum" method to deseed. This method gets +90% of the seeds out of the rind and that's good enough for me. I am dehydrating the seeds from about 30-40 poms in my Excalibur as I write this. That's a new preservation technique for me with pomegranates. I put the husks out for the birds to get the remaining pips to make sure the most is made of the fruit. I do have a massive lever juicer for the poms, I'll probably juice a good portion of the remaining fruit. I still have a jar of pomegranate molasses from a previous harvest so I am probably not doing more molasses. I probably could make another bottle of pomegranate/prickly pear grenadine now that I am thinking about it. If I get desperate I will make pomegranate jelly to use up the juice if I run out of room in the freezer.

LOL, I grew up knowing these are popping biscuits because the commercials showed the doughboys name as Poppin Fresh. It was fun to smack the container as a kid. I guess the correct term is refrigerator biscuits now. Poppin Fresh down memory lane. -
The yearly harvest where I willingly drive myself crazy. First batch of the lowest hanging fruit done.
