  1. OK, found the raspberry KitKats at ShopRite near my office. Will be easy to resist this one, the taste is very thin, almost "watery". There is very little raspberry flavor. Small sticks, around 2".

    Crabcakes for dinner, with a side of crabcakes. And salad. Baked them on nonstick alum foil, oiled a little to ensure browning.

    No photos, dinner at home last night also. Pan seared tuna that I had briefly marinated in soy/lime/ginger, oven roasted broccoli and garnet sweet potato (microwaved sweet potatoes until softened a bit, cut in to 1/2" thick circles, sprinkle of ancho chili, salt, and one drop of honey on top of each before roasting).

    Half of leftover roasted garnet sweet potato reheated in office microwave, scored and put a little butter, cinnamon, and squeeze of lime. Plus a couple of almonds on the side.

    Watched the Food Network while at the gym today and decided to make a simple recipe that Michael Symon demonstrated. Baked cod shakshuka style. I made it with scrod, doubled the red bell pepper, and tweaked the spices a little. It was very easy and tasty, served with riced cauliflower since I am trying to reduce carbs this month. I would make it again.

    Bizarre combo, but it does taste good because of the sweet/salty thing...baked tofu with very thinly sliced celery, grape tomatoes, roasted pepper, cantaloupe...with some of the leftover lime/fish sauce dressing from last night's dinner. Trying to make use of odds and ends.

    A refreshing dinner after all of that seafood (and bread) last night...rice noodles (vermicelli) with a dressing of fresh lime juice, fish sauce, brown sugar, oil, little coconut milk, a little bit of grated onion and garlic. Mixed with matchstick cut english cuke, orange bell, carrot, fresh basil (didn’t have cilantro), chopped peanuts. Sauteed some cubed chicken breast and mixed in. Very tasty, and have some leftover dressing for tomorrow’s lunch.

    Lunch from the pantry/fridge. Had a piece of baguette in the freezer, defrosted and toasted. Some nice fresh mozz, sliced, roasted red and yellow peppers from jar, fresh basil, drizzle of balsamic glaze. Would have made a nice photo but I had to push the cat away with one hand.

  18. I used the darkest and next darkest maple syrups from the gift sampler pack since I was cooking savory...I liked the darker syrups, they have a more intense maple flavor. Would probably be nice for using in baked goods where you want a stronger maple flavor to come through. Not sure if I'll be getting back to TJ's any time soon to be able to grab any more of these maple syrup gift packs, but I'd repeat the purchase.

    Chanukka at my house yesterday, we decided to do "Linner" late afternoon so those of us who work could be home/rested. Mom made latkes and brought them to be reheated (a B+ batch, she had some Yukon Golds in the mix and they didn't crisp as well as usual), the obligatory applesauce and sour cream to top. Sis made salad with baby arugula, oranges, strawberries, almonds and a simple balsamic dressing. I made "asian" flavored meatballs (oven baked in a sauce without pre-browning, a timesaver) which were a big hit. I had bought 85%-15% ground turkey instead of my usual 93% lean and I had to add more panko to hold them together, that was a panic moment, but the texture was still good when cooked. Purchased cooked shrimp from Wegmans, served cold with cocktail sauce. Mixed berry pie, ice cream, and fruit slices (almost unbearably sweet, but deliciously intense flavors) from an upscale confectioner my Uncle frequents. Kind of a weird combo of foods, but it was sort of a nod to foods I knew everyone liked.
  20. Shared this today with DH and his son, it was pretty rich, delicious. 9.2% alcohol, so no driving...
  21. Made a TJ’s run (ack, the madness) to get some wines for gifting. Picked up a bottle of gingerbread stout which caught my eye. Box of gingerbread mix, tomatillo salsa for hubs, chocolate covered espresso beans, dried fruit and nuts, box of carrot ginger soup, 4 pack gift of maple syrups ($9.99, a steal), bag of brown rice/grain blend (making stuffed peppers tomorrow).

  24. I had my first Cosmic Crisp apple today, selling for $2.99 at my local Shop Rite. Nice and crisp, Firm flesh, skin not overly tough, sweet. The flavor reminded me a bit of Braeburn. I would buy it again, but don’t feel like it was a “life changing” apple experience.😉
