  1. Oatmeal is an abomination. How do people eat that stuff? But yeah, I guess I know what you mean. Have a little brother who'd refuse ice cream (he had terrible asthma as a child) even though nobody would tell the parents, 'cause it'd send him straight to the doctor's.
  2. You got feet on your first attempt, which is excellent. The tops look smooth as well. But we really do need Patrick S or a pro to answer your questions. Also, seeing yours reminds me, is there a way to pipe 'em out without pointed tops?
  3. Butterfly, leaving the shell on, then season in tamarind paste and salt. Shallow fry.
  4. Re Annie's Swedish Creams Other than buttercream, does anybody have any suggestion for other fillings? I like buttercream, but it melts in the tropical heat and I won't have space for iced cookies come Chinese New Year.
  5. Oh this is on my to make list. Maybe this coming week. Any specific recipes I should track down? Also, will a thicker, more pipeable pastry cream be better for this? My usually recipe is on the thinner side.

  8. Dang. I only baked off part of my batch today, but forgot about the pistachios. Tomorrow. Tomorrow. Assuming that I don't succumb to the temptation of cookie dough, that is.
  9. You. Are. EVIL. I was planning to make Korova cookies today anyway. Now I have to try that, but I have no Pistachio paste and will have to make do with pistachios in the center of my cookies.
  10. I don't know how to do the calculations, but I think there's enough sugar in your confection to last anyway.
  11. butterscotch, if you live in a place that has no corn syrup, you'd probably substitute golden syrup for it. In a pecan pie, I daresay it'd be fine to sub it 1 for 1 in any recipe, but Lyle's is sweeter than corn syrup.
  12. I keep thinking layers of puff pastry, maybe a mille feuille of some sort with cheese filling and maybe a fruit compote of some sort. People were talking about cheddar cheese in apple pie. There's a Sherry Yard apple compote recipe that someone linked to a few days ago, if you'd like a link. Sorry, I have flu and probably don't make any sense.
  13. I am very very very hungry after looking at the pics! Somebody's gotta invent the technology that allows me to reach through the screen and take a bite!
  14. In 2007, I will eat as healthily as I can. I will make candied fruit. I will find fresh yeast. I will learn to cook. This is the year I will try to be less messy in the kitchen. If I use less bowls, I will wash less bowls and I don't like washing bowls. I will taste liver. Again. Maybe I'll like it this time. I will use the vanilla powder I have. I will give away more of the baked goods I make rather than eat them all. I will learn to pipe things that are round, ie don't have the sharp tip from being piped. We...who's we? My kids will hopefully never exist. I will teach the youngest brother to cook, even if it's just instant noodles, and the other one to cook something other than eggs, ham and instant noodles. I will read more recipe books? I really don't to read more because I'm on my way to going blind.

  16. I've seen recipes for brittle made with condensed milk, but I've never tried. I don't like the taste of it in the final product.
  17. Dear Santa, this time next year, I'll be living in a hostel. Do you think you could guarantee that my hostel will have a reasonable kitchen? I can buy my own handmixer and pots and pans and utensils, but I'd like stoves that will turn on for me (some stoves just don't like me) and a reliable oven. I know I've not been the best little girl in the world this year, but Santa, if it doesn't happen, I'm going to starve. Actually, I'm just going to settle for the parents letting me live in self-catering housing. Please Santa? I'll send you extra cookies at Christmas every year too.

  19. Snack food like Twisties, etc. I buy a bag, I eat one piece and it doesn't taste good any more!
  20. Agar-agar does need to be heated/boiled (can't remember the exact temp) or it won't set. If you boil it for 5-10 minutes, I do know you'll make a very very hard jelly.
  21. I don't know about carrageenan, but I am very sure someone tried Agar-agar already. I think it was Pam R, because kosher gelatin's hard to find or was HTF, and it wasn't successful--read the earlier pages to find out more.
  22. It's not because you don't like it, right? Because I saw this recipe, and while I've not made it myself, it doesn't seem very difficult.
  23. I meant to put the apple inside the sugar container, not in with the cookies. But you know, if you add some corn syrup to white sugar.. Hm... Which cookie are we talking about now?
  24. I use oil only, and it seems to work pretty well for me.
