We're landing in Portland. I've never been there. We have about three hours before we head to Lincoln City. Any lunch suggestions near the airport? We can drive as we'll be renting a car. We're going tomorrow, but we'll have the same situation on the way back next week.

We had a really enjoyable dinner tonight at 808. I've been there several times, and really do like the deconstructed tuna. The service was quick, maybe a bit too quick for me. We rushed because we had tickets to Celine Dion.Regretably the show was cancelled. We could have taken things a little slower had we known. Anyway, we had the seafood tasting menu. It was fun. Tomorrow night we have reservations at Bradley Ogden. Hopefully we'll have lunch at Mesa Grill before leaving for home. Thanks for your help everyone.

Hi, I'm staying at Caesar's for three nights. We having dinner at Nero's tonight. Any other must haves at this hotel? We don't have to eat here every night, but since we are fully comped, it would ne nice. Thanks

I just had that dessert tonight. I thought it was great! There was some kind of shell under the tart, it was not very hard. The pistachio ice cream was really terrific too. The other dessert we ordered was buttermilk panna cotta with grapefruit sorbet. Delicious, I thought.

Thanks for your help. What I'm doing now is lowering the flame from medium to very low once the water is on top. That stops the rolling. Do you have any problems with the plastic handle? It sure gets hot, and I'm a little concerned about it melting.
-
Thanks. I'm getting better at it. The coffee is excellent. That rolling on top sure looks like boiling to me though. It is so much better that my Melitta Drip. Someone suggested that Melitta made a decent electric drip. It was cheap enough, so I bought one. It was a mistake.

I've been craving a richer cup of coffee lately, so I've been using my Bodum vac pot for the last week or so. I haven't used one in years. I have a few questions. What kind of grind should you use? I've been using coarse. How long should you allow the coffee and water to brew before taking it off of the heat? Sometimes it boils, and sometimes it simmers. Does it matter? Thanks

I know this is an older thread, but I had dinner at L'Escalier, and it was fantastic. Whe I return to Palm Beach I'm definitely going back there. It was pricey, but not outrageous, especially if you compare it to New York better restaurant prices.
-
I was so interested in this thread. I am curious to know how you work the numbers out. You have to have some idea of how much a restaurant of the type you want will bring in, or at least hope to bring in. I haven't heard anyone say anything in those terms. Gross sales, as we call it in retail.

I'm so happy that I have them. I did buy more on Ebay at a fraction of the price, but they are not in mint condition (but very good). Since they came in batches, I have extras. If you let me know what issues you need, I may have them and would be happy to send them to you.

Maggie, ever since you wrote this article there has been a run on The Pleasures of Cooking Magazine on Ebay. Anyone that is interested should probably get them now because they're really cheap. After some time, I'm sure they'll disappear again.

The best pumpkin pie that I have ever made was from the "Greene on Greens" cookbook. It's pretty simple, and you can used canned pumpkin if you wish. It's from a cookbook that I have for over twenty years. You can get it for as low as $1.00 on Amazon. It's been a long time since I've made it, perhaps I'll bake one this weekend. If you want the recipe, I can email it to you.

My neighbor and I exchange a kugel for a honey cake every year. This year, I wanted to make her kugel for the synagogue luncheon. When I went over to her house, she handed me the "killer kugel" recipe from the times, telling me that it was exactly the same as hers, (leaving out the pineappe and walnuts, and overnight refrigeration). It's a fabulous kugel, everyone loved it.

The recipe with the whiskey is the one to bake. You can use 1/2 coffee if you like. You'll be thrilled with it.

BBQ Chef, How come you didn't go to the Hudson Valley Rib Festival? I think there was only one local from Kingston thre. Where in Newbugh are you?

I got my vacuum pot in 1971 as an engagement gift. It looks just like the one in Phaelon's ID photo. It's a Bodum. Red handle. Now I have to look for it. I hope I still have it. The coffee pot my daughter liked so much at the B&B with the pods is Kreuger (or something like that).
-
I decided that I really wanted the technivorm. I put it on my birthday list. Today is my birthday and two of my kids told me that my gift will be here by Wednesday. So, I'm keeping my fingers crossed. What about the machine with the pods that make a single cup? My daughter was at a B&B that had this. She said the coffee was really good. Also, when I get my new coffee pot, I really need to upgrade my coffee. I have been downgrading over the years, and I using prepaks. That won't do with my new coffee maker.
-
Ok. I've located the Technivorm coffee maker. I think I'm going to get the Capresso. It's easier to buy, and looks like it would be easier to take care of, if here are problems. Of course this is just my perception. Thanks for all of your input. This is a great site.

What is a Techi Vorm Mocha Master? I've found the Capresso, and so far I guess it's between that and a Cuisinart. I see the Cuisinarts everywhere, but I remember them not making good coffee. They are, however getting pretty good reviews here. I may just give it another try.

Do you know what Hudson Yards Catering is?

My home brewed coffee has been degenerating for the past few years. In the 80's, I used a Chemex. The coffee was wonderful. My first Chemex pot lasted for about seven years. When it finally broke I replaced it , and the second one broke within two weeks. I moved on to the Santos vacuum that was collecting dust in the closet, then to the Bodum press. Eventually I settled with the Krups electric drip. In those days (early 90's) that was the best electric drip coffee maker. There were at least a dozen models to choose from. It was better than the Melitta or Braun. I had several of them in my home, and last year, finally they were all gone. Someone gave me a new coffee maker for the holidays, and the coffee is not good. I went shopping for a new Krups, and only could find one model (except for the thermos type). I suppose times have changed, because from what I'm reading here, and the fact that they only have one model, I guess it's no longer a good brand. I need a new electric drip, primarily because I like to wake up to freshly made coffee. I may just try the Melitta. Hard to believe I was such a coffee snob that I would not have bought one twenty years ago.

We went out for dinner last night and had mango/apple cobbler a la mode. It was wonderful.

Several years ago (2001) I decided that is was time to bring some honey cakes to my synagogue for the holidays. I tried several different ones, and decided that Marcy Goldman's Moist and Majestic Honey Cake was the best. Needless to say, this is going to be the fifth year that I will bake those cakes. Each year, I make more than the year before. Our congregants, friends and neighbors love it.

I remember Dubrow's. How about Garfield"s on Flatbush and Church in Brooklyn? I must have gone to ten sweet sixteen parties at La Fonda Del Sol.

I've been gearing up for my day trip to the city for a couple of weeks. We made it to the bar room at around 6:00. We only had to wait about ten minutes for one of the small tables. I really loved the atmosphere and look of the room. My daughter felt the same. The bathroom situation was a bit weird to me, but it was attractive enough so that I got over it. We shared seven plates (not including dessert). While the service was quick and efficient, they brought all four dishes of the first round that we ordered at the same time. There was no room for it all at the tiny table. I figured they would know that, but for some reason they didn't. Here is the list of what we order in order of my favorites first. 1. Muscovy Duck with lychee and mint. This was a fantastic dish. The lycees really added it. 2. Diver scallops with poppy seeds- also great 3. Duck confit- my daughter's favorite 4. Braised pork cheeks- very good, but nothing fantastic 5. smoked eel rillettes- I was looking forward to this one, and while I found it interesting, it was a bit bland. 6. cucumber and mint gazpacho- really delicious gazpacho and crab cakes, but I did not like them together at all. 7. Arctic char- What am I missing? I loved the presentation, but it tasted very ordinary. My daughter loved th panna cotta, and I thought the berries and ice cream were okay. My mango mohito was delcious. Our bill came to about $200 with tip. That did not inlcude our drinks at the bar before being seated. We were stuffed. I would go back again, but am not going to rave about this experience to my friends. I agree that the next time I venture to the bar room, it will be after a trip to the museum. I would still like to get to the restaurant.
