Genetic Modification rulez. -
RUB technically is Kansas City representation, stylistically. Paul Kirk was based in KC before he opened his new restaurant in NYC.

You need to visit all the pits. But definitely RUB's brisket and South Side Market's Elgin Sausage, and Mike Mills' baby back ribs and BBQ beans. Oh yeah, and Dinosaur. And Salt Lick.

I'm surprised there isn't more coverage of this. I interviewed Nina recently and she's got some very compelling things to say about the future of Green Markets in general, as well as some very stong opinions as how we should all be eating nowadays (click).

It's very smoky. Cold smoked for a few hours and then its grilled to order.

Some new USC pictures: The bar, which features an excellent wine program by Beverage Director Christopher Russell. A view of the sunken main dining room from the bar area. The main dining room is a warm and comfy space. Hot Garlic Potato Chips. Fresh fried potato chips are a signature of two Danny Meyer restaurants, originated here at USC and also at Blue Smoke. Yes, totally. You can walk down (26th Street? 27th?) the street adjoining Madison Square Park where they set up and there are very few on-lookers hanging around, just barbecue freaks like myself prodding the pitmasters for juicy info. Nobody will stop you from walking up and talking to these guys, in fact they encourage it. Just be nice and be patient, because they have to pay attention to the smoking process and the first hour or two of setup time is crucial. Hang out at like 9PM or 10PM or so and they will just be sitting around.

One thing I do regret this year is there is no AMEX event at Blue Smoke on Friday like there was last year. But I'm totally going to check out the pits on Friday night.

Eddie Schoenfeld is a wealth of Chinese food knowledge and experience. To learn about the history of fine Chinese dining in New York, and how Chinatown Brasserie was conceived, you'll want to listen to this interview (click).

There's a Bar-B-Cuban, too. Cuban Sandwich with Pulled Pork.

Bailey's Blauvelt 136 Erie St E, Blauvelt, NY (845) 398-1454 Today we got a preview of Bailey's Smokehouse, the new BBQ restaurant that is to be housed within Bailey's Blauvelt Inn, an established Bar and Grill place on Route 303, just down the road from the Palisade Center Mall. For you New Jerseyans, thats about 20 minutes up the Palisades Parkway from Northern Bergen County. The kitchen will be led by no other than Dave "Fink" Finkelstein, previously of Stickey's (Teaneck) and Fink's Funky Chicken and Ribs (River Edge) Currently he is just getting the Barbecue up to spec, and the full menu isn't ready yet, but if you come in and play nice, you can get Ribs (both St. Louis and Baby Back) Pulled Pork, Brisket and Smoked Chicken. Bailey's, on Erie Street just 2 blocks off Route 303 in Blauvelt, NY. This Southern Pride Smoker, along with a custom rig (both originally from Stickey's) will be producing the Barbecue. Wood is Cherry. FINK!!!!! The upstairs Sports Bar. Deck area, for Al Fresco Dining. The famous Fink Barbereuben. BBQ Beans Shells and Cheese Ribs. The Barbecue now has a Apple/Honey BBQ sauce on it that goes great with the dry rub. Sampler Platter of Baby Backs, Spare Ribs, Pulled Pork, Brisket and Chicken. Brisket Closeup. Hand sliced baby. Another look at them ribs. Beanless Chili. Very strong cumin flavor and spicy, intended for use on their Hot Dogs and Nachos. The downstairs BBQ dining area, which is still under construction.

Kansas City has a well known gas station that serves Barbecue. In Louisiana, I encountered a number of Gas Stations that had hot Boudin sausage for sale.

Wow, that's a serious undertaking, Ah Leung. -
I also strongly recommend the Svenska Lantchips potato chips they sell at the Cafe. Truly excellent. http://www.svenskalantchips.se/Nyheter/sta...p?ttWCM=1,1,1,0

Eddie: Next time I go, I'm going to call you and you're going to order for me. I'm not sure we went in the right direction with the mains we decided to try.

More Ikea photos: The blue and yellow labyrinth of Medium Density Fiberboard Furniture hell. All it needs is a good Minotaur or Rancor beast and it would be complete. Don't miss these cookies, whatever the hell they are called. I think what they are trying to tell you is that you should have the meatballs. The menu. The Cafe was very busy that day. The Newark location is great for plane watching. Rachel thought the mac and cheese was from Stouffer's. Salmon Plate The soup of the day, a vegetable minestrone, was very good. The signature meatballs. Yum. There's something very Horn and Hardartian about this place. Ligonberry Drink. I like to call this Bug Juice. Daim Cake. It was much enjoyed by all. The Apple Cake. Also very good. Ligonberry Cake. Eh. A view from the cafe. Lost Ark of the Covenant, Aisle 34. What we came for. You didn't think I was gonna buy any of that cheap Swedish furniture, did you? Get your fill of Swedish Candy. And pickled herring.

Grind some up and put it in mayonnaise. Amazing over roast beef sandwiches or a shrimp salad or crab cakes.

Kam Man Foods? I seriously doubt it. Its Chinese stuff, mostly.

I don't see why you couldn't get it on the same roll he serves the Kielbasy on. That one doesn't have seeds, as you can see in the picture. Excellent Kielbasy, by the way.

I may just very well check that one out on the way back from Arthur Avenue sometime.

He also has the very excellent Boylan's Cane Cola, which blows regular Coke and Pepsi out of the water (except for when its Passover)
