    I know that Brian Polcyn (a chef/owner of Five Lakes Grill in Milford, MI) who serves terrines almost every night in his restaurant and teaches charcuterie at a culinary school (Schoolcraft College) is writing a book on charcuterie with Michael Ruhlman. The last I heard it will be published this fall. I have taken some classes with him and he is a very good teacher. Based upon his knowledge and Michael Ruhlman's previous cook books, I'm predicting that it will be a very good.

  4. Love the French Laundry Cookbook but found almost nothing of use in Food and Wine's best of the best. Great idea in sifting out the best recipies from all cookbooks published in a year, but very poor execution. Won't buy any future editions in the unlikely event they will appear.
  5. marine biologist! pooey, i say to him. as a chef, let me assure you..after you drop a lobster in boiling water and listen very VERY carefully, you can hear the lobster screaming. TRUE. ← Well it depends on what you mean by scream. But lobsters have no lungs or vocal cords so they do not scream in the normal sense. But there is an escape of gasses as their tempratures increase when put into boiling water. That is what you hear - but whether that is what we think of as pain is still in dispute.

  8. Except that he is really only a food enthusiast and really does not add anything other than his opinion. I find his criticism pretty cold and very shallow. And i do not give it much weight.
  9. Does anyone know if states will be able to ban all shipments (inter and intra state) and therefore still effectively ban interstate. That was my understanding, but I am seeing conflicting presss accounts.
