AB provides running off the cuff commentary during the 1 hour cooking, and then records some of the scripted parts..for example, I attended the taping of the lamb battle, and he recorded a teleprompted segment describing the parts of the lamb, using a chart as a visual. He does have some notes that I beleive he gets about the chef's background, etc that is on the lap top, but the commentarey is definitely unscripted..and also edited.

But this is a new pan, and you prob roasted the pork loin in the 300-400 range...I can't imagine this pan could take the extended high temp in the 450-500 degree range without discoloring, gumming, etc....the non stick will create that sticky gummy residue, IMO. this pan is perfectly acceptable for roasting meat, but not the best choice for roasting vegetables. I vote for sheet pans for roasting vegetables, or for smaller qunatities, a dedicated calphalon straight sided sautee pan... I figure charred specs just intensify the flavor of the next veg cooked in it,
  3. The Italian place at the Trenton Farmer's market has it, the place to the right of the kielbasi guy, not to the left. Sorry to be so imprecise. It's the stand with the coffee beans displayed towards the front.
  4. Hopewell Inn, Hopewell Township, Mercer County. Although the years of smoke in that place might just have permeated the wood floor and the very structure itself.
  5. I noticed that the ACME in Covington is on the NO menu list, but not the one in the FQ. Is this accurate? Trying to flesh out an eating plan for a Thurs-Mon long jazzfest weekend.

To clarify, they have a small patio are behind the restaurant, really jusst a door and small area leading to the parking lot, no tables. this is where they are building the outdoor area for smokers...10 steps from the bar stool, but outside. They have a seperate outdoor garden service area whcih will be smoke free.
  7. My local family owned bar/restaurant just rec'd the estimates on the three different options they were considering to accomodate smokers that stepped outside. Luckily, they also already have a rear exit with a nice patio area, so to create a structure with non-permanent walls with a few simple benches, plus heat, is goingto cost a bit over $8,000 This is a successful place, but I can imagine that some places won't be able to afford to create an outdoor "smoking area" for bar patrons.

  10. Daniel, I worked for Senator lautenberg when he sponsored one of the first proposed smoking bans,in airplanes. I know that 5 years after than ban went into effect, there were studies done which clearly illustrated the improvement in respitory capacity of stewardesses...I am not a google searcher, but I'm sure you can find it. This would be applicable to your current arguement. I supect that since the NY banis justa year old, there has not been the time to complete a viable comprehensive study. And regarding lobbyists, in my opinion, the tobacco and restaurant organizations have dumped millions into this legislation..but this is a time when, I think, public sentiment will prevail over lobbyists efforts. I agree that the Casino exception was a complex issue of unions, SJersey politics and big bucks lobbying.
  11. We are playing favorites, and it is simply not fair. Daniel can get all the refunds he wants, but will Rosie still say that F and P gets high points for presentations? I blasted Nicholas, but hell, the food was really, really pretty. I am overdue for a visit, after three lunches this fall ( poor/acceptable/quite good) and a RAVE from well respected foodie friends, plus this thread...but I will visit, report, comment..not blindly advocate or criticize.

I just can't let Rosie's comment that the food "looks delicous" pass...Rosie, I know the places you frequent..those photos show a TERRIBLE presentation..hmm, scallops on a pile of rice, with same colored sauce..lets add some greens to the bullseye...that's not a presentation, that's a visual disaster!
  13. It's about 2-3 miles north of Princeton, past Raymond Road and across from the Mosque. They do, however, use canned fruits in their baking. I find much of the home baked selections to be overly sweet for my tastes..the pretzels are great. they have lots of country cuts of meat that you don't find ouside a butchers, which is great... meaty soup bones, bacons, shanks, etc. Most of the cheeses are processed.."chedar horseradish" that kind of thing, but very tasty. they have fresh creamed butter as well. Daniel gave a great overview..they also have an extensive selection of pickled food...relishes, corn salads, beans of every type.
  14. yes, origin is a good choice, I keep forgetting about it. My sister used to live in somerville, so it was more on my radar. Service can be spotty, ( haven't been in over a year, that might have gotten better) but really fresh, well prepared food..I remember one shrimp broth based soup that was outstanding..complex flavors, spicy..but somehow light and refreshing. I gotta go back.
  15. I went to the L'ville Inn last week, not my choice...and had a perfectly fine meal. Because of my past history, I went very basic: a composed salad and ...jeez I'm forgetting now..trout? A fresh water fish, simply and very well prepared. Service was competent, well paced. No complaints.

  17. I just finished this book, and searched egullet to see if there was a discussion...WOW! It's like reading the book that nobody read, and then not seeing the movie based on same that was a blockbuster...read the book, people! it's amazing the slap or whatever got this much attention here on egullet...there is SO much more to dislike about this contrived, whiney, legend in his own world author...I was actually grateful that I was just reading an account of his life, as opposed to being a part of all his negative views and energy....event the first chapters whcih could have made him likeable..he was judgemental and full of himself even then. I am really glad that this guy is not my friend. I imagine that he is part of a circle of people who don't have an authentic, true bone in their body. He is a very contrived character. Now, I might also point out that he might not be this way in real life..but someone should have warned him that he was going to appear this way in his book. To summarize, i can't say I don't like DP, but I certainly don't like the DP in SOAC.

  19. where is cafe marcella? I like Siam, Swan Bar,,Deanna's ota-ya and Inn at the hawke in Lambertville, I had a fantastic meal at the Stockton Inn on Friday night, that's two in a row. In Princeton I like Ferry House much of the time but not all of the time, I'm not a Teresa's fan, but pasta is not a favorite. I like Mediterra, but there is a staleness there..nothing seems to change, ever. I like Rat's in Hamilton, too. I used to go at least once a month, but haven't gone all summer..I'm overdue. I am working in New brunswick these days, and find myself working my way through the restos there, for lunch.
  20. Well, we certainly had different experiences only days apart. You were able to recall your meal with very impressive detail, I'm afraid mine was less memorable. What other restaurants do you enjoy in the area?
  21. I had a first in many years lunch visit to Frog and the Peach recently...wonderful foie, but seared. Just as an FYI, D'Artagnans pate in the vacuum jar is better than most resto's versions...
  22. hey, soprano and Tommy jokes aside, ( funny ones, I might add! ) I'm siding w/ JG on this one...that's scary stuff, a kick to the head is real violent...I'd get out of there ASAP, and why pay for a ruined dinner?? I'd give a second thought to calling the police and getting closely involved in an incident that was hard to describe clearly..and this fact checking on his story is kinda weird..nothing seemed trollish or incindiary in his posts, IMHO.There was a time whan all of us NJ board folks believed what someone said, without calling police and restaurants to verify. MX..are you our official fact checker now?? Just becasue in rereading my post re the Lawrenceville Inn, I think it was pea shoots instead of snow peas w/the tuna app...

I don't think that 90% of the public follow chefs or their movements..and while I understand why you clarified who is no longer the chef ( and I've heard wonderful things recently about the RI, I'm going to try to get reso for after labor Day) and his departure explains the terrible food, its still sad to see a place with potential falter and start and falter and start...most people won't relate it to the chef, but rather just say the restaurant is inconsistant, and eventually give up on it.
