    Lime juice when heated beyond a certain degree may develop unpleasant bitter overtones. Use raw Papaya paste or Papain extract instead if you have to.
  2. Yes Anil, you do get all this at train stations except the bhuttas. I must point out that their imli/red chilli chatni is unique and not available outside the stations.

  9. Leftover bread, preferably Pav made into a bhaji. Lots of onions, green chillis, garlic, coriander, mint, lime/tamarind juice. The trick is to get the right consistency by using the right quantity of gravy and the right volume of bread. Three rights in a row will get you there. Rushina, you have been mixing around with some serious Sindhis.
  10. Rushina, you reminded me of my quickfix to be served with drinks: In a wok/kadhai with a tbsp of oil, fry some whole peanuts and whole red chillis. Remove with a slotted spoon to a grinder and add hand torn cabbage into the wok and stir fry very briefly with a little garlic and a little masala(any of the mixes will do). Grind/Pulse the peanuts and red chillis coarsely, add to the cabbage and serve immediately. Milagai will vouch for it, unless she was just hungry. I suppose it could be called a warm salad too. Variations are endless.

  13. Millions of people believe eggs to be non vegetarian(in the Indian sense of the word) including almost everbody that I know. If they are so deemed, then Milk also fits in the same category. And if I stretch the cusp further, Yogurt and Bread too. If your egg is not like this,then it is vegetarian. Of course you have every right to be part of everbody that I know. A very simple and effective recipe is to make a faux souffle by microwaving beaten eggs in a ramekin or a round upright pan. An egg curry is on most hostelite/student's daily fare.   16. Hi Amy and welcome! Where are you based? Tell us more about yourself. We take curd/yogurt rice for granted but it seems to have universal appeal. I too have never come across anyone not liking it. Maybe it deserves to share the pedestal with CTM.

  18. Rushina, I have just received some very fine high altitude jhambu grass. Apart from high hopes and trying to smoke it , how do you incorporate it in recipes? For one I am definitely going to infuse it in vodka.
  19. Knock, Knock... Sindhi friend Episure, are you listening?? Re: Gathadi aka Bheendi pickle. This one is too traditional and is one of the few Indian pickles that exists in it's own domain. However Rushina and some Bombay lurkers may want to ask for it at 'Ochi Pasari' near Khar Station. The shop stocks a lot of exotic thingz that will catch the fancy of ingredient hunters. Pasari is the old Indian word for grocer. My mom doesnt know how to make it anymore so I will contract one old pickle lady(like the cake ladies) to make some before the mangos disappear. Why this pickle is called Bheendi, I will never know.

  21. I make it this way: Arvi/Colocasia kababs Steam Peel Salt and deep fry Let cool and slightly flatten Deep fry till brown and Serve dusted with amchur and red chilli powder. After your vegetarian guests have eaten tell them that it was fish.
  22. It's without skin and it's not called Ondhwa flour. Somebody may have corrupted it from Handvo. To be specific ask a gujarati shopkeeper for 'Handvo no loth'. Handvo is pronounced 'Haandvoh'. Suman, let me know how it goes.
