  4. Atul is a brilliant chef and I respect him for being different. However, what is Marathi about the lamb shanks, I'd like to know? It doesnt even smack of Kala Masala which is signatory of Marathi cuisine. Tya cha madhi kahi nahi. Boy, am I going to get into trouble if I write a cookbook.

    A couple of malts, no make that a few.... no, wait make that several; help me think out of the spice box and I have more often than not conjured up some of my best cooking. There is no way in my sober state, could I have ever thought that a smidgen of coffee could liven up a Biryani. Ah, but I can do this only when I am cooking for friends.
  6. Milagai and worm@work, I'm waiting for more details, availabilty and recipes of this Panacea. At home we make a killer Besan Mithai (slightly more roasted than any other mithaiwallh)and this may be the right antidote for my once a year binge. Binge = 1 kg in 3 days, then I feel sick and wait till next Diwali. Like all all good things in life and relationships- never get too familiar!

  9. Suggestion: Add a small piece of absorbent paper in the ziploc bag. Equivalent of 10% volume of curry leaves. Tissue, packaging paper, anything will do as long as it is not glazed.

  15. I think I am going to like this recipe as I prefer crustaceans to be lightly spiced and not drowned in curries. I'll make an exception for fish. A few months ago, I made lobster, Thermidor style in a light sauce of coconut milk, red chillis, shredded ginger dotted with curry leaf pesto(for want of a better word). To make the pesto I saute the leaves and coarsely grind them with some roasted almonds and raw peanut oil. Machrobrachium rosenbergii can be made the same way too. I reluctantly confess that I am not much into roe. Hoohaw! Gautam, and I thought you are a plant man. I've also never much cared about the ever popular pomfret, but that may be because I like to swim against the tide. The rains are coming to a close here and I am looking forward to cooking some new species of fish. If I can get away I am going to spend a few days camping at a River bank and hopefully land some Great Mahseer.
