No. Maybe not actual paper sales even though the attention can't hurt. His slap in the face to Gramercy Tavern provokes discussion and ultimately buzz. Like Mike Tyson would do in promoting a upcoming fight. I believe his ultimate goal is to generate buzz.

Not a doubt in my mind that Bubba Gumps generates more interest in the publics mind then Daniel Humm. With that said being Michael Bauer awarded four stars to Humm before his departure. I could easily foresee Bruni reviewing Eleven Madison Park within a reasonable time.

I'm afraid I don't follow your reasoning. Nobody knows when Frank Bruni is going to review Gramercy Tavern until after it happens. Are you suggesting that readers will be snapping up copies of the Wednesday Times in giddy anticipation of GT's Hour of Judgment? I think not.And exactly who are those people who've been anticipating an EMP re-review? He said nothing in earlier reviews to suggest this was coming, and there was no precedent for it — this being the first time Bruni has redone one of his own reviews. Obviously, the Times hires critics because it believes their work helps sell newspapers — they are running a business, not a charity. But in that regard Bruni is just like any other critic. Indeed, there is probably less anticipation for his reviews than that of most critics, because it's totally unpredictable when his reviews will arrive. ← Uhh. Since Chef Humm came on board last February it has been one of the most discussed restaurants in the city. Naturally people was anticipating Bruni's next review and would it be upgraded from two stars. Bruni said so much in the review himself if not for Humm it would not have been re-reviewed. And for Michael Anthony one of the most respected and admired chefs out there. I am sure there are those wondering in anticipation Bruni's next review of Gramercy Tavern and if his opinion has changed.

Seems to me what he lacks in food comprehension he more then makes up for in building anticipation and selling newspapers. Is it a coincidence that he took pot shots at Gramercy Tavern in the very same review that all have been anticipating since Humm's arrival? Now with Michael Anthony coming on board at Gramercy Tavern he has planted a curiosity seed in those waiting for that review. It is my impression it has been all about business to Bruni from the very beginning.

Recently I found what can best be described as a waiters rant website. I don't hold to much stock in such a site as the possibility is present of revengeful ex-employees striking back. Still found it interesting though that many felt Chef Humm was lets say... Well better left unsaid. If true I could get the impression he may be uncompromising on certain issues.

I certainly have not seen anybody insinuating Bryan was looking to get buzzed. On the contrary most if not every post states they seen no harm in his having a glass of wine at all. What people are objecting to is casting blame at the server and calling him inexperenced for doing his job regardless if the laws enforsed or not.

I did not get the impression that Marcel snapped at Betty at all. Seemed to me Betty had not heard the hold up on the plates and Marcel passed the information along. Would love to see what type of kitchens Betty has been in if she considers that snapping.

Well at least were now on the same page. If I recall correctly assault was not enforced in LES in the 70's.

I didn't see anybody say that. I think that is exactly what Bryan said, if not in so many words. He said that in his years of dining experience in New York's finer eateries, he's never before been refused service, and has actually had to turn away wine sales pitches. In his own words I think we've come to a consensus that drinking age laws are puritanical silliness and shouldn't be there... but they are there... and we're trying to come to terms with whether they should be obeyed for their own sake, should be ignored as the probability of anything bad occurring from breaking them is miniscule, or something in between. ← For a moment I was tempted to check the side affects on my meds. Thank you.

If I recall correctly the base of the discussion was high end restaurants do not acknowledge the drinking age in New York and the server was faulted for doing so. Any other discussion that grew from the original topic is icing on the cake in my opinion.

Yes! How could I be so naive? I should have expected management stating the facts like... Were trying to squeeze every $90 bottle of wine we can. Sure no one is looking because this is NY and you know we have to compensate for those extra tables we pulled out. Plus with chef getting all this publicity lately he's demanding a pretty penny. Not to mention overtime with all the staff turnover. Etc. Etc. How dare I be so unrealistic.

It as come to my understanding that a interested party made a inquirer to EMP management regarding this situation. The reply went something like... Even though they may not agree with it, it is still their responsibility and their employees to uphold it. No inner personal policy! Just obeying the law and as simple as that. Which I believe I mentioned at the beginning of this discussion.

Thank you! Like I said up thread. The notion that no one is paying attention or raids, stings or whatever are slim is beside the fact. Just one hard ass sitting at the next table is all it takes. Personally the server refused to gamble on his job and I commend him. If anything this is another sign that EMP is striving to be the best they can and are taking their work very seriously.

Good point. Few remember that almost everything written about Keller in the early 90's was what a tyrant he was in the kitchen.

I never thought for a moment that EMP was ever at risk of being raided. But it never needs to be that complicated in life. Just the wrong person at the wrong time dining at the next table is sometimes all it takes.

I believe we all are in agreement that the risk may be minimal. Next question. Should we expect to be served no matter how minimal the risk and withhold gratutity from a server if he/she chooses not to?
