  1. Sure. The flambe-ing basically cooks flavor into the meat - it works in every pan, from el cheapo tinnies to Calphalon Professional Non-Stick. Just keep your face out of your saute pan when you do it, and make sure you aren't directly under your inbuilt microwave, etc. - home kitchens don't come with the high open space of the Iron Chef studios - or any other professional kitchen (!) ← Gotcha. I'm worried, however, about the effect of the flames on the Teflon. I've heard so much on the news about how dangerous Teflon gets when it is overheated. Am I being overly paranoid here? Thanks!
  2. Regarding the flambe challenge.... It appeared that they were doing this in non stick pans. Is that safe? (stupid question, I know...)

  6. Hi Everyone --- I got a day off, YAY! Amber is on a dig this week and is staying in Bremerton. SHE thinks that I am going to sit around in my underwear and play Golf on the X-Box all day, however, since Bremerton is a short Ferry ride away, I thought I would surprise her tonight and meet her over there. She is there with work folks, and is expected to eat with them, so are there any suggestions on good, down home places to eat? (Most of her crew are just barely college grads and aren't making much...) Thanks! ~Jason
  7. So.... I am sure that this has been asked before, but I couldn't find the thread. The reading group that I belong to has made the mistake of selecting me to pick next month's book. I am to pick 5-6 books that the rest of the group will vote on. I have selected 3 already, but need a couple more for the group to vote on. They need to be fiction and available in paperback. I have one book of short stories already, so that is probably my quota there. I have already selected "The Devil's Larder" by Jim Crace and will be choosing one of bourdain's books, (duh...however, suggestions on which one would be welcome, as I haven't read any of his fiction.) (I promised the group a Stephen King book, so that is the other one) Any and all suggestions would be much appreciated! ~Jason
  8. Hey ya'll --- We have a NEW Salumi pie starting up this Thursday, the Spicy Pepperoni. We're using Armandino's Spicy Pepperoni (LOTS of Smoked Paprika...Mmmmm....Paprika....) and putting it on our Original Cheese Pie. This will be on the menu from here on. It willl be a base pie, so, if you want something extra on it, you'll have to add it when you order it. We will, however, be happy to substitute it for something else on any of our menu pies, so have at it! I'll most likely have it on the line this weekend.   10. Alas, my man, no. My understanding is that our supplier went out of biz and we couldn't find an alternate one that could deliver the quality that we needed. I only had it a couple of times, but I agree, it was a great pie. People still ask about it. Sorry..... ~Jason
  11. I vote that this be served on the UW campus so I can buy it using my food plan God forbid I should have to spend any of my own money... I'lll second everything everyone else said. Thai and Teriyaki, though they may not be representative of native Seattle food, are definitely ubiquitious and occasionally good. ← Oh...Don't Worry...The UW locations will be running it...(When, I dunno, but they'll have it...)

  13. HOWEVER... If you want to kill 2 birds with one stone, you can get your Salumi Fix AND some of Seattle's Best Pizza by ordering the Salumi Primo from Pagliacci Pizza. The Salumi Primo Begins Feb. 2nd. The Delivery # is 726-1717. Not that I'm biased or anything... (Ok, I am....Badly... ) You Salumi fans, I'll have it on the line every Saturday and another day to be determined....tell you what....what other day do you want it?   14. Yay! I won a contest at work, and will be spending a fun filled week in mid February in lovely Playa del Carmen. We will probably be eating the majority of our meals with the group that we will be travelling with, but we WILL have some free time. I plan to spend most of this free time stuffing my face and trying AS MUCH Mexican/Mayan food as possible. We may also be going to Chichen Itza, Tulum, Cozumel, (maybe) and basically anywhere there is Archaeology. My wife will do the archaeology, I'll be looking for tasty morsels to eat. I'm looking for tasty, local, preferably cheap, local, traditional, local, (ok, I'll stop,) that won't make me sick. Taco stand? A stand in one of the Archaeological parts that has a can't miss offering? Breakfast in Playa de Carmen? The Best place to get our morning coffee? Lunch? What is something I absolutely MUST have before I leave? This may be sacrilege, but tell me the places you would tell Anthony Bourdain! (And....do I really need to worry about the Ice in the margaritas? I'll be majorly bummed if I can't have a margarita while I am there...) Can't wait to read your suggestions! Thanks! ~Jason
  15. Bunk. I'll take as many as I can on the stop to the mini mart before embarking on the plane ride. Because I'm a glutton, I'll even eat airplane food, but not without the extra packets of salt, pepper, and most importantly, MAYO that they so thoughtfully put out for me. So sue me. ~J

  22. WAAAAAAAAAAAAAYYYYYYY too late in posting this...but hopefully dinner plans have not yet been made.... All profits from today's sales here at Pagliacci will be donaed to the Red Cross Hurricane Releif fund. I suggest the Seasonal....The Mushroom Primo. White Sauce, Provolone, Mozz, Shiitakes, Portobellos, Chantrelles and Button Mushrooms, with some diced red peppers and capers thrown in for the heck of it. I HATE mushrooms, but I even like this one. Thanks! ~Jason

More South Park Stories! :lol: The 2 year old neighbor kid snuck out of his house yesterday morning and was picked up at 6 am 4 blox away...His parents were COMPLETELY freaked out, can't blame 'em.... Same neighbor told me the other night that when he was coming home from work that he saw 4 guys strolling down the sidewalk of 14th Ave. (the main drag)...at 2 a.m.....all carrying baseball bats....FUN! Ok, down to biz....on the advice of someone that I thought I could trust, I went to Jalisco in South Park last night. We walk in, and immediately notice that besides the staff, everyone is gringo. After the alarm bells quiet down, we order, I was jonesing BAD for Carne Asada, and Amber had tacos. We also had Margaritas, which were stron, and mine was unsettlingly salty. Chunky Salsa was ok. Took a bite of the Carne. 2 words. Worcestershire Sauce. 3 other words. No Charred Taste. Was tender and all, but just weird. Mexican Rice was offputtingly greasy. Apparently, I am Gringo Man, as our server asked me if I wanted butter for my tortillas. (NEVER been asked that before!) As we were finishing, Amber noticed that they were serving up the chips with bare hands. Ick. I'll stick with El Rinconsito, MUCH better Asada. Not that I've had much of it, but charred meat goodness. We both agreed that we don't need to go back. Went to Rascals as well last week. Amber had the Captain's Platter, which was good except for the fries, which was sad. I was transported back to the 80's, by both the decor and my....(drumroll please...) California Croissant Sandwich!!! All the classics...Croissant, Avocado, Turkey and Bacon...Man, takes me back! Then Amber ordered the Cheesecake, took one bite, and the expression on her face was so bad that the server hurriedly whisked it away. She said it tasted like it had sat out waaaaaay too long. Will try the ribs next time! ~Jason
