  1. Will you all pay attention in class.WE now have a score of 3 for cooking, 2002 Guide we were 2. All clear now? I think its a fair score for what we do.....The score for cooking is only part of it, the review itself carries more weight(IMHO) As long as its an honest reflection of what we are about, then i have no quibbles with the GFG I could rant about how a restuarant that scored 4 for cooking, whilst buying in sorbet, when i was scoring 2 for making it...but that a different story

I have had my copy for a couple of weeks now, but felt sure someone else would start this thread by now Only Gordon Ramsay scores 10 Le Manoir.Waterside Inn, and Winteringham Fields score 9 Fat Duck scores 8 But the big big news is that we have moved to 3 from 2....and according to the review we " put on a happy face" which is nice

I'm just cranky after a long season, BUT for the 18 ,Dave turned out 16 lamb/beef dishes all cooked differently, from rare lamb to well done.The organiser made a little speech at the end of the meal thanking the staff, and commenting on Daves skill ...he just forgot to tip, the tight fisted wanker!
  7. My pet peeve this week? Bad tippers.. 1) 40TH BIRTHDAY PARTY...booked for 6 turned up as 8 people. I got creative, got them squeezed in, looked after them well, delighted with the food etc £5 tip....thanks 2) 40th wedding anniversay 14 people, baners on the table, speacil food for i very picky child, personalised menus printed...£0.00 tip 3)18 people had the whole place...delightfull evening, very impressed with the service and food...£690 bill....£0.00 tip thanks alot, do call again these all over the last 2 weeks

  12. Right on!.Some of us a just happy to plod along, not that fussed by the guides, critics etc.No plans to expand, or roll out 35 franchised units by 2005. I don't have a career, just a life i enjoy, doing what we do for the hell of it.If i wanted the money, then we could turn tables, open more, cut costs etc etc...but wheres the fun in that?

    I believe the problem with cod is more acute in the North Sea. I think that its the fishing industry and the goverments job to decide what to catch and how much.I will buy what is avaliable.If there was a ban on any fish to preserve stocks, then we would buy other fish.I also think that quality farmed fish will play a huge roll in the future for restaurants.

    We can get chantrelles, pied de muton and some others, autumn is best time.I just wait for the lady to tell me that shes got some, then we add them to the menu as we see fit.All a bit slapdash i know
