Hey, we've been serving cherries with coffee for years (seasonally) .Today, i was greeted by a big box ( i had only ordered 2lb) ,quick call to my veg man to be told that a few looked a bit old and tired, and he didn't have time to sort them .KERCHING £1.50 the lot, after sorting i lost about 15% of the box.
It all depends on who you listen to.North Sea Cod is fucked, but i'm told we have plenty down here in the South West.Govertment should be telling fishermen what they can land and what they can't.Then we chefs will have to buy what is available, and the punters can order with a clear consience, But with the present system of Fish quotas controlled my Euopen Govertment(an i don't even pretend to understand that) our Govt is about as usefull as a one legged man in an arse kicking contest. Farmed fish looks good on paper as a sustainable system, but what you get is "battery " fish, fecking pointless.I don't use farmed fish...ever.
I enjoyed last night's show, good to see someone who could cook for a change from the normal numptys.Gordon was right of course to point out the over elaborate food was not what captured stars, but he was on slightly less solid ground, as he couldn,t save his own place a couple of years back. Is it in his contract that we have to see him getting dressed for service? A good example of by chasing stars , you may not see the brick wall in your way.

I assume that all the results/reports from EHO Inspections are covered by the Freedom of Infomation Act, so maybe we should all start publishing our results as a step forward in addressing bad practice? I,ll show you mine, if you show me yours !

I,m still watching it, and i agree it's not a great show.Only thing of interest to me tonight was Gary Rhodes closing his kitchen and then bitching about JC stepping in a serving his guests.Has Gary Rhodes ever bloody ever closed any of his "real" kitchens because the food was sub par?Of course not, so why do it on this game show? He threw in the towel.
..but is he pleased to see you? I,m warming to JC, his team are being led with carrot and stick, not just stick from Gary, who must be regretting doing agreeing to do this now.
£250K to start your own place, total bollocks.These people want to be famous, not good chefs.Reality TV hype and nonsense.I lay a bet with anyone that whoever wins ends up presenting a cooking show on Cable TV, not grafting 14 hours a day in a kitchen.Service is the the good part of the show,seeing how the Head Chefs run their kitchen is very interesting.
