in a word-tapas. if not available, i try to go for something that i'm not likely to cook for myself. if i'm really having problems then i just try to drink myself silly- an answer will generally come after bottle of wine #3.

heard a piece on npr back during the "war" about the tradition of preparing this fish. seems that there were many restauarants along the rivers which specialized in smoked fish- the process is a closely guarded secret in families. the fish restaurants fluorished before the war, but are few and far between now. wish i could remember more.

Not behaving? That can certainly be arranged! also a relative newbie-i've been lurking in 2 geographic areas. this site seems to be the culinary equivalent (at times) to wwf/minor league hockey/ monster truck races. if you want bloody chicklets ( not a side dish) just put in your two cents about a new fast food joint. oh yeah-any tips for navigating the site are more than welcome. victoria

I didn't see any writing that went on at length about Central American culture. I read about some folks checking out a chicken joint. If you want to start a thread about DC traditions before I was born, go for it. Just don't browbeat me about how I'm too young (or naive or stupid or whatever your point was) to fathom your wealth of knowledge about how it SHOULD be prepared and how it SHOULD taste. For what it's worth I am passionate about food and I love this site. I'm certain I'm on the RIGHT board. i want more threads about pretentious foodies beating each other to bloody cyberpulp with cast iron frying pans. and can y'all get a little more serious about comparing the thickness of the schmeg on the frying pans?? it's so like guys having a size contest- i'm getting a little hot and bothered down here in hampton roads. as for this chicken- sounds tasty, looks tasty. think that i don't see many of the working -class latinos in d.c. standing in line for zatinya! and i wish that there were a good, open all nite tx taco joint in norva. would love to have menudo at 0300 or a beer and breaky taco after work. -
went to nick's back in '96-yes, very campy greek restaurant. would also love to hit the urbanna fest- will there be local oysters?? i guess that the impact on the bay from the storm won't be known for a while. i've managed to find quite a few small seafood retailers- in norfolk, poquoson, buckroe beach and phoebus. you'd like to think that the shrimp was right from the bay but it seems that they get alot from south of here. most of the bivalves appear to be local, though. along the lines of the having run the gamut of the decent local restaurants, i've got folks coming to town this weekend and i figure that i'll just impress the hell out of them and take them to todd jurich's. it's a very hansome space and wine doesn't suck. vick

What? Should they ignore you and not ask if you are finding your food to your liking? Yes. Exactly. If there's a problem, I'll signal them to come over. Otherwise, don't bother me while I'm eating. Bruce exactly why i enjoy dining in europe- i live to be ignored!

as a north cackalackian, i understand that Wade Cole has paid you a phenomenal tribute!! i think that i read about him in gourmet last fall. anyone who takes the tanked ag industry in n.c. and turns it into great pig flesh is my HERO! guess that the folks inside the beltway haven't learned their lesson about pork! (attn john edwards) i was kinda hoping for scratch and sniff 2.5 version with the pix--i was stuck at the hospital all weekend, but had to excuse myself to salivate in private. i know that i missed something really cool... i'll count on al to give me his version (that'll be a hoot) thanks for providing some welcome diversion from the stress of the neonatal icu! victoria

thanks-came from d.c area via tampa- i'm transient due to my job. frequent todd jurich's. it seems as though the quality of dining in norfolk drops off drastically after that. and you'd think that with the proximity to the water there would be a few good seafood places, but that's virtually non-existent. seems like there aren't many gulleteers in the area either!

i'm a fan of grilled pork t-loin. i make a marinade w/ a bit of chipotle and honey and cumin. dean and deluca/sutton place for cheese. too bad you aren't in philly-reading terminal has a pretty good selection of fresh mushrooms.

a side of apples sauteed w/ red cabbage and vidalia onions sounds good to me.

I'd love to try this out. But, even though I live in Old Town, I hate driving over that way. Is it worth it? i wasn't impressed with take out from there, but this was a while ago.

there's a place over in ft washington off of indian head hwy-don't know what it's called but i was out w/al dente one afternoon and he smelled it before i did-quite a feat considering that i was born in north cackalackey. we stopped and got some delicious ribs w/ sauce and slices of white bread. there's also a spot over in the landmark section of alex. called (i think) tastee burger. the Q is imported from n.c. but they pile on the slaw and it's good for a quick fix. they also serve greasy truckstop breakfasts and half-smokes. when i lived in tx, i went through total pig withdrawal- all i could get was friggin' brisket, but now that i'm away from it i think that capital Q is pretty darn good, cheap and i can get smoked turkey there-great before hockey games. but give me an oven or grill and i can make some pretty bitchin BBq-hush puppies on the side (i go for vinagar style with a little hash thrown in!)

Mmmmm..... jar of meat sticks..... (a la Homer) grew up on chicken stix, but was also drawn to purina cat chow and crisco. will open up a jar of fruit at work if i'm starving (i'm a neonatal/pediatric nurse)never gone so far as to add similac to my coffee.

i just claim i'm pmsing so i can justify eating pork products (country ham biscuits, pork rinds, hot dogs, prosciutto..the list is endless!!) cheese-can't stay away from it. need red meat after it's all over. crave cheerwine occaisionally, but it's hard to get these days. -
greasy cheeseburger from whataberger in san antonio-the outcome was pretty miserable.

geez- i recognize that look in al's eyes- PURE PORK LUST! (fueled by something liquid) i remember when he used to get misty eyed over my grilled tenderloin- he's come along way. looks like y'all are having a time already.

southern junior league cookbooks are a wealth of recipes-- "charleston receipts" is my favorite (especially for punch recipes for 200 folks) you could deconstruct some tradtional desserts like red velvet cake or lemon meringue pie. coffee bread pudding is excellent during the fall and winter.

think that we're all talking about the same crap eating cannibal. caught blues in the surf in sep/oct timeframe and generally just used them for cutbait. my brother would smoke them, but wouldn't use them for anything else. taste sorta like mullet only stronger. given their aggressive nature, couldn't we skip cooking them and just use them for homeland security instead??

new to the gullet- lots of ht's in the tidewater, va area-very big, shiny new places. can't stand farm fresh. everyone knows that food lion is the pits. there is a cool little groc - g.w. marketplace- that has a wonderful deli section and lots of cool foodie-type items. for any texans out there- the heb is the best, especially the marketplce in northwest san antonio. great produce and everything you couls ask for in a singles scene except a bar- but i know that no one would ever go to a store for that
