    Zuni Cafe

    Well my meal there was great. I may not be a chicken roasting queen, but I can hang with the best of them. I just dont have a wood burning oven laying around my house. That made all the difference, it made the bread taste like a sourdough version of Texas toast. Zuni, technically, may not be Danko, Tru, or Chucky T's (Trotters), but the food touches the soul and conjures up memories of childhood. Which would be hard to do for a southern gentleman like myself. That to me is worth more than when I ate at those other joints. Plus, I can get a great meal at 11pm on a sunday.
  2. There is a guy here in Shreveport that sells shiitake and he grows it off of saw dust. But I have seen them use oak in Virginia. OK, the cookbook is called Simply Elegant The Cuisine of the Windsor Court Hotel. The recipe that has stirred my curiousity for the past 13 years is Sauteed Snails with Folsom Chanterelles. Once I did have a converation with John Folse about 6 years ago who said he had a friend in Alexandria that would give them to him for free because nobody wanted them. My friend Neal who runs the NOLA kitchen has told me about a mushroom guy on the Westbank.

    Thanks for easing my anxiety. Totally devoting 3 days to do nothing but eat and drink in SF--Can I ever really go wrong?

  5. Just a little west I had a great meal at Cuvee Beach, ran into Emeril there also. Criolla's on hwy 30-A never dissapoints.

    Well Im offically depressed, Im supposed to eat there this sunday night and Im scared to look at anything on the menu other than the oysters and Chicken. I will probably be full of oysters from my lunch that day at Absinthe---dont tell me that place sucks too?
  7. A very, very, very long time ago I remember reading a cookbook by Kevin Graham (ex long time chef of the Windsor Court) that called for Louisiana chantrells. Where are they located and how do I get them?
  8. Will be in San Fran at end of January. Where do they have fresh grated wasabi? Where is the best dim sum?
  9. I will be staying in Buckhead.
  10. After getting screwed over from hotwire.com, I wont land in Atlanta until 11:30pm on thursday. Where is a cool place to eat and drink at that time?

    Popcorn at home

    Cool, I'll definitly try more oil, the plastic bag, and maybe drying out the coconut before grinding to get a finer powder. I did try to imediately add the seasoning after the popcorn was done and I covered the pot with foil, shaking vigoursly. But most of the seasoning wound up stuck onto the side of the pot. Hopefully the bag will fix that.
  12. the only place to eat in all of Arkansas is James at the Mill. It is near Fayetteville in the NW corner of the state. Plenty of great restaurants in Austin, Nashville--The Acorn restaurant, Franklin TN--Saffire Restaurant, Memphis-- Wally Joes(dinner) , Seasons at the White Church (breakfast, lunch or dinner)
  13. Bayona is in the french quarter I believe on Dumaine. You can park across the street in a hotel lot and they will validate your ticket in the restaurant. Herbsaint is on the corner of St. Charles and Girod in the CBD, just valet there.
  14. Been to bayona twice and herbsaint 3 times (Dinner only). Herbsaint is just as good at half the price.

    new orleans

    I dont live in new Orleans so when I go I make sure every meal counts! Fine dining, Peristyle (quarter) is great make sure you ask for BJ to wait on you. Bistro Maison deVille(quarter) for an incredible lunch. Patrik is the quintecential New Orleans Maitre'd a personality not to be missed. Herbsaint(CBD) has great food, I have been there 3 times and have never been disappointed. Even better--it's cheap. Gabrielle (Mid-City) has been on my tops list for 6 to 7 years. The only Emeril restaurant worth visiting is NOLA(quarter). Ask to sit at the chef's counter and Neil will give you a show. One last--Lu Lu's(quarter). About 6 tables outside and 2 inside. Its a 1/2 block from Bourbon street but you cant hear any of the noise or smell any of the "gumbo". Paul Williams, one of the chefs, makes ridiculous good food in that closet of a kitchen. Bring your own wine, no liqour license, but plenty of good stemware. Uglich's(edge of CBD and uptown) for the best po-boy in the city!!!
  16. 460, dont think I wont have the English version of El Bulli the day it comes out. Used book stores are my favorite, I even bought a cookbook once called "The transvestites guide to cooking" too funny. i gave it to one of my waiters

    Popcorn at home

    I started popping popcorn in a large pot the old fashioned way recently. I cant get my Thai yellow curry(homemade dry powder) to stick really good. Any suggestions?
