  1. Harvested the first of the scapes yesterday (as well as the first of the lettuces). Eggs over scapes sauteed with creminis and shitshitos and finished with cilantro and spicy globe basil. With focaccia crusts and blueberries.
  2. Quick cold plate dinner of pickled herring,house gravlax with dill, liverwurst, cucumber, tomato and focaccia.
  3. Saved meaty beef rib bone from last weekend with horseradish mustard, some of the roasted vegetables and a tomato.
  4. I'm pretty sure it is. Can't go against an Aussie tradition. I could be mistaken but I think even McDonald's has a burger with beetroot.
  5. A few recent breakfasts. Shakshuka made with a doubled batch of base that I made a few weeks ago and froze half. Couldn't tell the difference in the finished dish so a keeper. An egg scrambled with dill and chives, house gravlax, tomato and thinned greens on a toasted WW English muffin.
  6. That's a technique really used to produce a clear flavourful consomme. It takes a long time and I don't think it's what the OP wants. He's looking for a fast runaround to using boxed supermarket broths.
  7. That's an even better idea as long as you have homemade stock.
  8. Try browning the ground beef with some chopped up chicken wing tips, a chopped up chicken back or backs or some chopped chicken feet. They'll add the collagen than differentiates broth from stock.
  9. Lots of interesting sandwiches however the one that I would really like to try is the Newhouse (smoked sablefish on a bialy).
  10. @rotuts I split the focaccia then toasted it. Layered the brie on the top slice which allowed it to soften and warm but not enough to squish out of the sandwich when eaten. Also microwaved the beef enough to warm but not enough to cook it any further. @gfweb Completely agree that sandwich assembly is important as well as choice of bread. You wouldn't want to put something like egg salad or hummus on a hard roll sandwich and have it squirt out all sides at first bite.
  11. Simple late dinner of leftover rib roast, brie, greens and horseradish mustard on focaccia.
  12. Things are starting to get going here. I'm envious of @Shelby's haul but not of the heat they're experiencing. First tomato flowers (Scotia a determinate variety), first scapes and coriander getting going. I was happy that the tarragon has taken off. It was planted last year and did poorly.
  13. My perfect omelet would be one with no browning and the inside like soft custardy eggs. I can get that about 50% of the time as it takes near perfect timing and any filling ingredients warmed without any excess liquid (when using greens). Here's an older example: mushroom, spinach and goat cheese 2 egg omelet.
  14. Sunday dinner of a 1 Kg. rib toast (after trimming and tying) roasted over a bed of carrots and onions. Rib bone roasted alongside and will be a future dinner. Butternut squash with garlic (in the ramekin in foil) roasted alongside and removed when done destined for a squash mash with the roasted garlic and herbs. Worked out well and after the meal I realized I didn't take any more photos 🙃 Oops.
  15. My choice would be a couple of slices of blood sausage. I've never had scrapple however since I like blood sausage, head cheese and similar products I'd most likely enjoy it.
  16. Sunday breakfast of breakfast sausage, grilled tomato, herbed eggs, WW English muffin with crabapple habanero jelly and mushroom.
  17. Baked a no-knead focaccia yesterday ('divots' of @ElainaA's roasted tomatoes). Trimmed the four crusts and gave half to my neighbor and kept half for sandwiches. Cremini mushrooms, a mix of green onion whites, shishito and Thai chili and the onion tops and fresh tarragon. Mushrooms and pepper mix cooked down, eggs cracked over and garnished with onion tops, tarragon and pepper. Served with the reserved focaccia crusts for dipping.

  21. Yesterday's and today's breakfast. Waffles with strawberries and crabapple habanero jelly and peameal bacon (only one pkg. left in the freezer). Breakfast sandwich of an egg scrambled with a few shrimp, shishito peppers, green onion and dill on a WW English muffin with tomato and lettuce. Sloppy to eat but tasted fine. With a mix of strawberries and grapefruit.
  22. Beautiful clear skies this morning however showers forecast for later today. Hearty breakfast to take advantage of the weather and get some things done outdoors. Eggs soft scrambled with Thai chili, green onion tops and cilantro, hot Italian sausage and a WW English muffin with Bonne Maman orange marmalade. V8 and a mix of strawberries, grapefruit and orange.

  24. Leisurely breakfast this morning. Egg salad (with Thai chili, dill and chives), pickled herring, house gravlax (with capers and fresh dill), mini cucumber, mustard sauce and WW baguette. Mix of strawberries, grapefruit and orange and a glass of V8.
  25. I believe this would be considered a po'boy. Shrimp and Chorizo with tomato, lettuce and a remoulade(ish) sauce on a WW baguette. Dry NS cider on the side.
