Haddock braised in spicy tomato sauce with olives, capers and spinach. I boiled some tiny potatoes alongside and tossed them in at the end, but we ended up thinking they were superfluous. I don’t think many of them got eaten. Pasta would have been a better choice, but we are overwhelmed with all kind of potatoes right now.

Yes, breadcrumbs on top. I used Jamie Oliver’s recipe from New York Times Cooking. I like it because the eggplant is baked plain rather than breaded and fried. You can taste the eggplant more that way.

Miso salmon, coconut brown rice with ginger, and spinach. My sister was chopping garnishes while I was cooking dinner, and we ended up with way too many (cashews, cilantro, peppers) so we ended up just strewing it all over our plates and calling this our “Love, Actually” decorated dinner, inspired by the scene where Rowan Atkinson’s shop clerk keeps adding more and more decorations to a gift wrapped piece of jewelry.

Thanks for sharing your trip! The reef looks very healthy. That is a serious current going on in a couple of the videos! I have to say that I am impressed that you can travel so far and then stay for what seems to be a relatively short trip. I don’t think I could do that. -
Monday: roasted sweet potatoes, broccolini and delicata squash with miso ginger sauce and black sesame seeds We have started getting weekly delivery from our community fish share again because this year they gave up their requirement that you had to accept the “fish of the week” and are now offering a la carte from what’s available. This week we chose tuna and salmon. Last night we had the tuna seared with soy dipping sauce, rice and a cucumber-pepper salad.

Not food, but a couple of food adjacent gifts I got this year. I have a menu board in my kitchen. I used to put the week’s meal plan on there, but it led to many disagreements over what to actually have. So then I just started putting the day’s dinner on it. This still caused disagreements between various family members, so my nephew got me this cover for it for it for Christmas. It’s great. Now I only uncover the board and write what I am making if I am open to suggestions. Otherwise I leave this cover on and people just show up and eat what I decided to make. Nobody actually cares enough to go ahead and make themselves something different for dinner, they just like to complain 😂 And then my husband got me this cute little painting of an ice cream cone from a gallery in one of our vacation spots because I love ice cream.
