Actually when I poach my pears in a sangria-like liquid, I prefer that they not be ripe .. softer pears will disintegrate too quickly in the heat. Just peel them and go for it! Do you add lemon and/or orange zest strips to your poaching liquid with the port? or even a cinnamon stick? yummy!

I, too, absolutely concur with you all on the desirability of small plates ... enough of which make for a big price ... But I did read the article with some amazement at the convoluted way in which the author made the rationale!! ... boggled my mind ... had to share (so very California, ya know!) Does one ask one's waiter for "the Ritalin Tasting Menu"??

You must realize, those of you who religiously read the posts in the Southeast Forum, that many of the topics posted recently would make a damn nice meal in Dixie: ham biscuits and sweet tea and pepper jelly .... not too shabby at all! still worrying over why people put peanuts in their sodas in the South though ...
Update on my initial post: since I read the article on cinnamon, I purposely eat a dish of applesauce daily with a half teaspoon of cinnamon and have watched my blood glucose make some small improvement as a result (this is the only variable which has changed in my eating habits at this time). Perhaps an element of truth in the study after all??
