Minus 8 Ice Wine Vinegar

Hey guys,

Well, I need to ask a question, and I usually hate these "anyone tried it" forums, but I was wondering if anyone has dared order the expensive ($30 for 100ml) ice wine vinegar called Minus 8? I have read that Jean Georges uses it, and I was wondering if I should put it on my Christmas list.

Is all Minus 8 vinegar the Ice Wine variety?? I know we use it in our kitchen at the restaurant because I've seen the bills for it, but didn't realize it was an ice wine vinegar. I'll have to ask the chefs tomorrow exactly what we use it for because now I'm curious.

Yah, it sounds good, and I have even tried an ice wine venegar as well before, but not this brand. I can only imagine how good it tastes. Over tahitian vanilla bean ice cream? I love that combo in my head already.... Going to post on my I Scream thread.....

I've asked and we use the Minus 8 vinegar to deglaze the pan our Foie Gras is prepared in. :wub:

It's incredible.  Definitely worth it's somewhat heavy price tag.  In fact, I prefer it over any other vinegar (including my 75 year balsamic).

One of the greatest things to come out of Ontario food-wise in as long as I can remember!

Hey Puck,

What is it good for? Salad? I can hardly imagine cutting an expensive vinegar like this with EVOO.... Good as a condimento though, eh?

:biggrin: Sometimes wish I was Canadian.... free healthcare and all.... and no murder.... and nice maple syrup...
