Alton,

I have read that you have had formal training in the culinary arts. I'd like to know which cuisine style you prefer and what chef's/cooks inspire you the most when you cook for yourself and your family.

I'm a big fan and I watch Good Eats on FN as often as I possibly can. I only wish that your show aired more often, and that I had a TIVO so that I wouldn't have to miss the show at all. :-) Thank you for the time you take to research and explain the science behind cooking...for me, an humble home cook for my family, it make the task rather enjoyable when I understand why things cook (or flop *grin*) the way they do.
