I posted this topic in Cooking, and got a good source in San Francisco from MobyP. I also found one in Texas. Does anyone know a retailer in NYC who special orders wild boar?

Look for Fossil Farms. The offices are in NJ and they have farms in Penn.

Ask for Lance. If you have problems contacting them email me and I'll find his email address. D'Artagan carries Wild Boar also.

Well, well, well, I just discovered that Fossil Farms and D'Artagnan sell wild boar through Amazon (I'm glad I never dumped my Amazon shares). This is too easy.

How much does amazon charge for instance Wild Boar Tenderloin. I pay $11.50 a pound. I might have to check this out after I get a little sleep.

Amazon shows a whole boar tenderloin (looks trimmed) for $45, without shipping. It doesn't say how much it weighs, so I can't tell if it's a good deal. Let's face it, with shipping alone it will cost more. But unless a find a retail store in NYC, shipping will be my only option short of driving to Fossil in Penn. I asked a game farmer at the Greenmarket yesterday about boar, and she said that she didn't think there were any boar in NY State.

I had some amazing boar chops at the Standard Tap Room in Philadelphia recently; I'd like to see those start appearing on NY menus. Though I do

like the Wild Boar lasagna at Apizz.

Does Amma serve boar? I know it was on the menu at Diwan. Perhaps Suvir could pass on a source.

I understand that with dry heat cooking, boar can be tough. I'll have to try the chops.

It turns out that Citarella offers wild boar and other "exotic" game on special order. I called the shop on Broadway today and asked about the place or orgin and price price of Citarella's boar shoulder. I was put on hold for quite a while, which made me think that I was making a rather unique inquiry. When the salesperson came back on the telephone she said that the boar would come from Nebraska or Penn., and required a 2-3 day advance order. However, because the market for boar was in flux, she could not tell me what the price would be for a 5-6 lb. shoulder. She couldn't even give me a range of prices. I told her that was ridiculous, and asked her to do some research on boar orders in the past few months, so that she could give me an idea of price range when I call again tomorrow. Do you think they ever sell any of this meat?

I got my boar tenderloin from Praire Harvest,

Just seared it and then pan roasted. Served with whipped potatoes, blanched spinach, and a port, chicken stock, pomegranate molasess reduction. It was wonderful.

Yesterday, I received 4 wild boar shoulders from Broken Arrow Ranch (approx 5 lb. each). They were shipped 2nd Day FedEx, and came expertly packed with dry ice in a Styrofoam box. I paid $6.98 per lb., freight included.

I'm glad to hear that you had success with the boar tenderloin. Boar is notorious for being tough. Braising cuts are therefore recommended. I'll let you know how my braise turns out. BTW, would you mind posting that fabulous sounding recipe you made?

It's great! The stuffing used to be lamb shoulder before and they recently changed it to wild boar. They are breaded and fried and served with a side of lemon confit aioli. It's definitely a great snack

It's great! The stuffing used to be lamb shoulder before and they recently changed it to wild boar. They are breaded and fried and served with a side of lemon confit aioli. It's definitely a great snack

I'm trying to picture stuffing a sage leaf. These must be some pretty big leaves.
