@Duvel What don't you like about salsify??? It has a great texture, and not much in the way of flavour.

I have never tasted it nor seen it for sale anywhere around me. Reading up on it, I keep seeing comments that it tastes like oysters. Is that true?

Not really. They remind me of Jerusalem artichokes a bit, but milder. I like them.

I have never had Jeruselam artichoke either. Another thing that I have never even seen for sale around here. Regular artichokes (fresh ones that is) are pretty rare too.

They are slightly sweet and nutty. A bit like parsnips.

The texture is similar to white asparagus.
