The Strip House on Rt 10 in Livingston. Beautiful bar. Call to be sure they have oysters.

Two recomendations: one North, one Central...North - South City Grill in Mountain Lakes...oysters seem to always be fresh and they pour a top notch martini(many varieties), Central - Soho on George in New Brunswick...
