I want to make a panna cotta, and instead of using water in which to dissolve the gelatine, I'd like to use a light coconut milk. Will gelatine dissolve well in coconut milk? Has anyone tried it?

Have you tried dissolving it in a little liquid of some other sort, then adding that to the coconut milk? If gelatine is a complete bust in coconut milk, konjak should do the trick; it's firmly gelled pretty much everything I've thrown at it.

Yes ... coconut water. Worked just fine. What's konjak?

And just WHY doesn't gelatine dissolve in coconut milk? It dissolves in tomato juice. It must dissolve in a lot of 'liquidy' items.

A good technique is to bloom gelatin sheets in cold water, wring out excess water, then dissolve it in warm coconut milk.

I've never used sheets and have no idea where to get them, or how they'd convert to powdered gelatine.
