Mediterranean Olive Bites

Serves 45 as Hors d'oeuvre.

A tasty and very crunchy Hors d'oeuvre

1/2 Cup Chilled Butter - cut into 1" pieces

1 Cup Gruyere Cheese or Montrechet if preferred - grated

1 2oz tin of good Anchovies - rough chop

1 Cup All Purpose Flour

1/2 Cup Kalamato pitted Olives, drained - rough chop

1/4 - 1/2 tsp Cayenne Pepper

1/4 tsp sea salt - reserve

In a blender, place the flour, butter, cheese, anchovies, olives, and cayenne.

Pulse until the mixture forms a ball

Wrap the dough loosely in Plastic Wrap and refrigerate for an hour

preheat oven to 400 degrees

Roll dough dough evenly and thinly (1/4") on a lightly floured surface

Cut dough into 2" wide strips

Cut across each strip on the diagonal - alternating to make triangles

Place on baking sheet(s)

Bake 8 to 10 minutes until golden brown and cool on wire rack

Sprinkle with light dusting of sea salt as soon as removed from oven
