We were just in Madrid for a couple of days and had dinner one night at La Barraca. The paella was just fine. While the rice was outstanding, the seafood in the paella was terribly overcooked (with the exception of some very tasty red prawns).

The two best places for paella style rices in Madrid are El Ventorrillo Murciano and Samm, both are great, but none of them cook a proper paella valenciana, in fact I don't think that anybody does in Madrid.

Part of the problem with paella is dragging it away from its home, and part of it is the difficulty in making a faithful representation of what it should be in a restaurant whose service is not centered around the dish.
