Salvaging mediocre pineapple

I have fresh pineapple which is just not that sweet or juicy. Any recipes out there where I can use it in a dish or a pastry where it would still taste good?

Saute it in butter with brown sugar and some rum.................

Or cook it on the bbq/grill. Just sprinkle a little brown sugar on first. Assuming of course, that you have a bbq or grill . .

use it in a Nyonya-style curry with coconut milk, tomatoes and shrimp....like here.
