  1. When I am chopping Jalapeno peppers or any other kind of hot pepper I hold on to the pepper with my hand encased in a ziploc bag. That way I never get any of the seeds or pepper juice on my skin (and later in my eyes).

    If you have onion or garlic smell on your hands rub your hands all over something stainless steel. Could be your sink or fridge or you can buy a stainless steel brick for this purpose.

    If you have remnents from your sauteed food stuck on the pan put the pan back on the stove and pour in some water and dish soap. Bring water and soap to a simmer and scrape away.

  2. The Dallas Morning News publishes a really respectable and educational food section once a week. The restaurant reviews come out on Friday and they too are informative and most often dead-on with their critiques, etc. When a place is bad...they say so!

    The alternative weekly, The Observer, has a restaurant section that is a good compliment to the Morning News. They tend to write about the Dallas "scene" , not necessarily the 4 star joints the News would cover.

    I am very happy with the Dallas food journalists!

  3. Raynickben, thanks for your thoughts on Two Brothers - have you ever tried their BBQ?  I'm always hunting for good BBQ and would definitely go back if it is good.  What do you order there?

    Tremors: I did not try the BBQ. I am not really a fan of BBQ except for maybe once a year (wierd) and I tend to avoid ordering items that don't match what the restaurant is. Yeah, I know they have a huge BBQ sign on the window but how can any kitchen do all the Mexican and all the BBQ well? It's like when you see a pasta dish at a steakhouse. It doesn't work for me. In places that have huge menus as Two Brothers does I order items that have similar or same ingredients as other items because it is most likely fresher ingredients. I wouldn't order goat if only one item has goat in it. How long has that goat been there?

  4. Hey ExtraMSG: I've "talked" with you on the Portland restaurants board where I live now and tomorrow I move back to Dallas where I lived for 12 years so I enjoy reading your posts!

    I love Abacus, Ciudad, and Liberty Noodles so I'm glad you got to experience them. I likewise had a bad experience at The French Room for much of the same reasons. There are a few other restaurants I would have sent you to had I read your post on Chowhound but you did a VERY good job making the grand tour. There are some restaurants here in Portland that I really enjoyed but I've got to be honest...Dallas restaurants rule. I think the size of the city and the competive nature of restauranteurs and Texans in general really equate to some outstanding dining.

    I can see how the owners at Two Brothers might put someone off...they are very exurberant. And my first time there I was offered the LARGE margarita and I told the guy "no, I'm driving" and that was that. The next time I did order the LARGE margarita and couldn't function the rest of the day :smile: I don't find that kind of "upselling" a problem but maybe it got out of hand when you were there.

    I think I must order well at Two Brothers because I enjoyed the food....but others have not. Thank God for choices!

    Oh, one more thing: NEVER, EVER, EVER go to Ixtapa in West Linn (off of 205). Unbelievably bad.

  6. I lived in Texas for 12 years so I know my tex-mex. I cannot find good tex-mex in Portland....including Esparzas! I was really disappointed with that place. I have had a couple of good dinners at Two Brothers in Lake Oswego (State Street). My husband had a not-so-good dinner but he is very hard to please. They have giant margaritas there too. And the two brothers are super nice. Give it a try...it can't hurt!

    Apple pie with melted cheddar cheese on top.  What the !@#$!!?

    Melted?

    I've always eaten apple pie with a wedge of extra sharp cheddar on the side, not melted on top. Eeeew.

    It's usually found in diners in the South.

  8. I like Gerber banana, plum, and pear.

    I keep on trying to think of legitimate uses for them, but I can't.

    I did use a couple of jars of the banana in place of "real" bananas in a banana bread. It worked pretty well but lacked that strong banana flavor. But hey...I was able to use them without throwing away $$$.

  9. Breast milk cheese? Oh my g-d.

    I do have one point to bring up....as tasty as the baby fruit jars are they are so damn expensive!!! Don't you just lose it when you open up a new jar and the baby takes two bites and that's it? You can't save it for later :angry:

  10. The last paragraph of that article where he states that liquid smoke is available in 4 oz. bottles is what I was referring to. We had a bottle of it in my refrigerator some 20 years ago. Let me clarify....it was my mother's refrigerator and yes, it was used as a condiment. I have detailed some of my mother's foul cooking in other threads but I think this says it all. :shock:

  11. Irwin: Please read my original post before you go off on me. The only time we felt "put upon" was when after 20 minutes of WATCHING us divide up the check the waitress said she would only take one form of payment. I also noted that neither the waitress nor the menu nor the hostess, etc. told us that this was their policy. You know why they didn't tell us? Because it's not their policy. Also please note in my original post that this was a SLOW Tuesday night for the restaurant. I can guarentee you we were their biggest ticket of the night.

  12. If your going to a restaurant , before why not arrange how your going to order, pay bills, etc.

    Going back to my original post: We did not force the waitress to be a "book keeper" as you put it. We clearly wrote the 4 names and amounts to be charged to each card and the other 5 paid in cash which was presented all at one time.

    Furthermore, we do know how we're going to pay before we go. Some people bring enough cash and some people never pay in cash...as long as you pay for what you eat who cares? We go out as a group often and never have we had a problem until that night.
