Today I would like to share with you the recipe which is very simple and where the main ingredients are just apples. All cakes with apples I know involve cutting and stewing the apples. Here not. For this cake you should add pieces of fresh and fragrant fruit cut in half. This time the recipe for this cake is not mine - it comes from the Polish page http://moniamieszaigotuje.blogspot.com. Ingredients: dough: 6 apples 280g of flour 200g of butter 1.5 tablespoons of caster sugar 1 tablespoon of vanilla sugar 1.5 teaspoons of baking powder 1 egg 125g of vanilla fromage frails icing: 1 tablespoon of 18% cream 120g of caster sugar Heat the oven up to 180C. Peel the apples, cut them in half and remove the cores. Mix together the dry ingredients: the flour, caster sugar, vanilla sugar, and baking powder. Add the egg, vanilla fromage frais and butter. Knead the dough. Divide it in half. Cover a baking pan with one of the halves. Arrange the apples on top of it. Roll out the rest of the dough and cover the apples with it. Bake for 40 minutes. Make the icing with the cream and caster sugar. Cover the baked hot cake with it. Leave to cool down. -
Today I have a recipe for those who would like to eat something more sophisticated than pieces of sausage on a stick, caught on the fly from the fridge (I do it myself sometimes), and who don't have enough time for shopping and cooking. Wholemeal pasta with courgette and goat cheese - the basis of my dish could be groats, rice or pasta. I chose wholemeal penne. Grilled courgette, goat cheese, cherry tomatoes and black olives meant that the dish almost jumped onto the fork by itself. Even my children appreciated it. Ingredients (for 4 people): 200g of wholemeal penne 2 small courgettes (about 500g) 100g of goat cheese with herbs for salads 16 cherry tomatoes 12 olives 4 sprigs of rosemary 3 tablespoons of oil 2 tablespoons of olive oil 1 teaspoon of olive oil with chili pepper half a clove of garlic salt and pepper

Today something sweet for a family dessert. Lemon-coconut cheesecake. I did it few weeks ago in April and was asked already few times to repeat it. That reminds me about my childhood -
Today the "Spring cream of spinach and garlic soup". The dish looks extremely spring-like and decorative. Maybe it sounds trivial, but you should remember to clean the spinach thoroughly and remove the thick, hard stems. Grinding sand and unblended grains effectively ruin the tasty effect of the soup. Ingredients: 400g of spinach 3 cloves of garlic half an onion 2 potatoes 1l of vegetable stock 1 tablespoon of butter 100ml of 18% sweet cream 4 eggs the whole recipe is here

Today the "Herby muffins". My daughter, who likes trying my culinary experiments, ate them at once and another two for packed lunch. @cakewalk- we do not have special dishes for Dyngus Day - we have dishes for Easter (Dyngus Day is one of the Easter days and always on Monday). These might be among others red or white borsht with sausage and eggs, different dishes from eggs, different meats, pate and vegetable salad. An example are Red Eggs posted by me yesterday in Dinner 2017 (part 3)

@Anna N @RobertM That's challenging while we do not have in Poland one special Polish dessert. We have rather few unique cakes. For Easter we prepare Mazurek, for Christmas these are Cheesecake, Poppy seed cake (which I have already posted here on eGullet Forum few days ago). We have charlotte (sometimes called apple pie). For few of them I have the recipes on my blog. While we have many season fruits (strawberries, apples, plums) in Poland we use them to prepare cakes and desserts. Below you will find pictures and links for these which I had prepared for my family. There are as many variations of them as you have house wifes in Poland: Cheesecake (cold version)

The Easter is coming so today Red eggs: Ingredients: 4 eggs 125ml of beetroot concentrate (I usually use Polish Krakus) 1 tablespoon of mayonnaise 1 teaspoon of horseradish 2 tablespoons of minced cress salt and pepper the whole recipe here
