  1. I don't need all the books while at work, but access to the kitchen manual would be amazing. The book gives context, but when in the kitchen I would just like access to the various tables and percentages given. Is there any possibility of an electronic yet secure version of the manual being available to registered owners of the book. Thanks. Also, thanks for the vision to start this project and see it through. I am looking forward to pastry in a few years. Patrick
  2. Is there a spreadsheet available for calculating values in tables from pages 2-276 - 2-279. Been googling for a while and would like to do calculation for various steak sizes and meats and not 6" logs etc. Thanks
  3. Are there any other recipes or sources of ideas for use of aquarium bubbler to create foams. The web was not very giving, and the book was vague other that the one honey water recipe (4-267).
