  1. I have an opportunity to buy a case each of Caoba(milk) and Icoa(white). The seller is a chocolatier who is retiring, so I'm hoping the price will be quite good. But of course, one should only buy chocolate that tastes good and is easy to work with. So I wonder if any of you have worked with these chocolates, and what do you think of them? Also, I'm only making confections for friends and family, so I might have these around for a while. What is the shelf life of chocolate discs? Many thanks.

  3. Ha, I could have used that in Charleston last week! EVERYthing was in bloom. A feast for the eyes, but not for my respiratory system.

  8. Boy, I learned so many new things. But one of my favorite things was the elderflower liqueur. It's floral, and citrusy all at once. Thanks to Mette and whoever brought the St. Germain. And of course, air brushing! Can't wait to get hold of some colors and start playing!
  9. Just back from the conference and what a great time it was!! I'm going to need two days just to put together everything I learned. But the best part of all was meeting everyone! Thanks Robert and everyone else who made it such a great experience!
  10. Yes - bring eggs! We can use some whites for nougat, we can make some curd in the TMX, marshmallow. Anyone got a bit of gelatine? I can bring gelatin. I'll buy a couple of the 1 oz. packages. Is that enough?

  21. I'm in for the Friday afternoon activity, whatever that is. My husband and I will also be joining everyone for dinner and post-dinner hanging out. I vote for non-chain restaurants if possible.

  23. So after much indecision about whether I wanted to stay near the campus, or commute from home (about an hour away), I booked a room at the Best Western for Saturday night. I did it through Hotwire for $97 including all taxes. It's about a mile from the campus building we'll be working in. Breakfast is included, though I have no idea how good it'll be. So if anyone is still looking for a hotel room, that might be an idea.
  24. What should one bring to the conference? I'm planning on molds and scrapers, but I don't know what else I should be bringing.
  25. Robert, I will be here on Friday, and would love to join any activities that day. Also, my husband, Ben, would like to join us for dinner on Saturday and maybe also Friday evening. I have some molds that I'd be happy to bring. I'm thinking of buying an airbrush because I'd really like to learn to use it on molds. So if I do buy one, I'll bring it along.
