Diacetyl is a naturally occurring substance that gives butter its characteristic flavor and aroma, and is often a component of artificial flavoring formulations. Acetoin, a closely related chemical, also occurs naturally and is an ingredient in many flavoring formulations, perfumes and essences. Artificial Butter Flavorings (ABF) Components https://www.popcornsupply.com/flavacol-butter-flavored-seasoned-salt So what makes the buttery flavor?
-
I saw that too - that's the stuff in the Flavacol, right?
-
Yeah I'd rather stick to butter and salt too. Cheddar cheese powder might be interesting however...
-
No - measuring and weighing is.

Nice. A little more work than I’m looking for when making popcorn, but whatever works. You gotta get together with the ice cream guys; imagine the popcorn ice creams you could pacotize!

Nothing from bulk bins for this shopper. I don’t think they are cared for properly. As mentioned previously, The Rice Factory mills to order and to spec. All my Japanese rices come from them.
-
Only stovetop for us. Popped in duck fat (but will use avocado oil or another high heat oil) and butter. Nary an old maid in this pop.

I think this may accelerate the process. I think you're better off buying rice in sealed bags. It's not more expensive, considering the expense of throwing stuff out.
-
The laws are crazy, but this appears to be fairly current (2020):

Or no one at Ninja Shark can count?

Or maybe the last time they actually cleaned the bin. Even if @KennethT or I dump the rice out of the jar, the smell remains until that jar is washed out! White flour spoils too, and emits a very similar smell when it's old.
-
Yeah - they're not counting the respin in the 5 or 7.

Yeah - this is the hybrid I was thinking about above...delicious. I still buy true Concords when I (rarely) see them; their season is quite short. These Thomcords, a cross between Thompson seedless and Concord, are able to take the heat of California and have a tougher skin. True Concords can't deal with that heat. The Concord parent grapes (Catawba & Delaware) makes very nice pet nat and still wines...being produced in the Finger Lakes region (and in very small quantities so far). I look forward to their Concord grape wine!

I think so, absolutely. And I know that smell you're referring to!
-
Think this is key, as we learned (didn't we?) with steaks and getting them evenly cooked throughout.

Whynter. Works great. And I don’t even have to take the base’s temperature nor freeze it overnight.

I'm waiting for 2.0, and to hear about its sturdiness. I had my Lello for like 15 years and then gifted it to a friend.
-
I’m not over thinking; I’m not even buying.

Same here and I like those dense, blue foam ones. They work well. I do have a nice pair of noise cancelling headphones, Jabra, which are great but I just don't want to be wearing them in the kitchen! I only wish I'd started earplugs a long time ago, as my hearing isn't what it once was - and this noisy city is certainly no great help!

good post, and certainly the reason to soak / season both glazed and unglazed cazuelas. I don’t wash mine in the dishwasher either, since the once time I did, I felt like it picked up a funky smell maybe from the d/w soap. It cleans so easily after a simple soak I. Plain water for 1/2 an hour.

if only most chefs “out” actually cooked duck properly..
