  1. in my town , there was a Pizza Parlor.  it had been here for at least 50 ++ years.

granted its not a Restaurant , but very close.  they had lasagna , SpagBol , meatballs

all made in-house  not the pasta of course    but pizza and grinders as they are called in my area.  salads

I wish I has asked to take a pic of their menu-board above the ovens.

they opened at 9 AM and might have had eggs etc.

they closed at 11  and worked every day.  they were Greeks originally , as most PP's in my area are Greek in origin

their pizza was middle crust and fantastic.   they remembered everybody and most of the time were quite busy.

many family members , and also a few who worked there for ever,

in the summer time it was broiling hot in there

they sold the PP  and it fort revamped and trendier     more expensive.  old ovens out , some sort of conveyor belt cooker

    terrible pizza.

Ive never seen a group work so hard and remain so cheerful.

    but that's a different generation

I agree with much of what you say

"   more money than brains "

currently where I live " Those Who are required to serve "  are a bit like that

I do agree that the name of the VegButch is , well , what it is.

all advertising is a bit of Shake and Bake with many bits of Smoke and Mirrors.

we know this.   well the vast majority here does

    so worry Nought !

the VegButch has something to do !

  3. this VegButch is interesting

however i find this more so :

    Prepo1.jpg

    PP2.jpg

    PP3.jpg

Ive posted about this before.  Ive only seen this in one store that's fairly high end in a town 2 minutes E. of mine.  a local family owned cchain

    RocheBros.

these items are made fresh each day in store w ion store ingredients.  most of the veg you micro.  the meatier things go in the oven.

I don't have children , but i worked long hours , of which I mostly enjoyed. except for the rare idiot I had to deal with , politely of course.

I always cooked coming home.  I grilled fish more often than not.  W/O children you can eat later.  Get mildly ' hydrated '  on the spot

but if I could afford the above , and back then Im sure i could , there is something to be said about sitting down as a family

large or small, eating something cooked in your own home or apartment.

there there is the Anticipation , there is the Fluid Therapy , and there is the very important intangible of the Aromas  wafting from

    the Mirco and the Oven.

if WholeFoods does well w a VegB , OK.  they would do better to study the above and move in that direction.

    So  do you WholeFoods ?  ( I don't )  no matter

anybody who spies a VegB at WF  please see if they have the above.

  4. since the Great Ship eGullet is sailing pretty close to the wind here Ill offer this on GMO:

""  GMO plants can spread their genes to conventional crops through cross-pollination ""

this for me is a very big deal.

what ever your intentions , motivations , etc being for GMO

at this point after TheBigBang   stuff is surely gong to happen that is unintended , for any sort of reason.

GMO cannot ever be put back into The Bottle.  its forever and forever.  not llke you or me.

  5. these might be terrific , or not.

I had a couple of packets of something similar in the sense that the product was trying to imitate the potato :

organic ( even ! )  [ green veg here ]  fries  :  a processed veg  ( I think they had 4 types ) that looked like a potato french fry

which you bought frozen and baked them in the oven.   they touted them as healthier that a potato french fry

and intimated you could get that delicious potato french fried effect in a healthier manner.

    you can't.

you may like these or not for various reasons.  but a 'Tot is a potato 'Tot or its not a 'Tot.

the roasted veg seem interesting for those who don't have the time or inclination to Roast their Own.

  6. E-Lux has a home Combi oven that's full sized.

@pedroG  has one in Switzerland  :

he suggested the price was around 2 K USD.

a steal Id say, but can't get it here

Ive seen all the ovens at Yale , as its on the way to TJ's

    the

     Miele DGC6705XL (combi-steam) - $4,199

is a little bigger than the others  , but far from full sized  and way to expensive.

  7. I frequently Steam_Bake in the CSB.  on its rack above the pan that came w the Cuisi.

the meat frequently drops a little between the rack's metal grid , and is hard to then remove when done

I now cut a pice of parchment paper slightly smaller than the meat , and slash it here and there but not all the way so it holds up.

the meat still drains into the pan below  but no longer cooks itself to the rack.

I saw this on the fantastic series  Great British Menu   and more recently , of all places , America's test kitchen

I hope you get the idea.

    I love Indian food.

2 days in B's   One day in Sri Lanka  if that's what the capitol was called then

My parents and my sister spent the day in SL  at  a Rug Emporium    no matter  were were ordinary modest Folks

but had an introduction to this Establishment

the owner then invited us all to his home for dinner.

    rugs everywhere    you betcha

but I deeply remember that dinner.

so One Kudos your way for your group having a fine time.

I agree with you completely.  Anova always seemed to be a cut above

remember the early temp issues and how they handled those ?

I just hope Anova gets solid advice from a known combi oven maker

so that the Anova oven charts a new quality path in that direction.

    Breville when w a bigger BV-XL

    this one

    https://www.amazon.com/Breville-BOV845BSS-Convection-Toaster-Stainless/dp/B00XBOXVIA

it was even very briefly on sale at SurleT.

I saw it at W-S  on my way to the Apple store

nothing about it did I find interesting.

  10. bumping thread up :

did anyone back this and is now a backer ?   I backed early but bowed out as the unit size was not much greater if at all to the

    CSO.

however , w news that Anova is being bought by E-Lux , my hope for a larger Combi has been rekindled.
