laser engraving carves onto the plastic case, permanent but there is no color. Very detailed design is possible. You provide the artwork, set up charge is not much. Labels will not last too long in a kitchen oily environment . Silk screen is good if done right. Not cheap for small quantities. dcarch

The most important thing is to clearly define the various different forces to avoid going in circles. For instance, adhesion is not suction. There is vertical force, horizontal force, dynamic pressure, static pressure, viscosity, etc. I am not sure why "sticktion" has anything to do with atmospheric pressure when it is so clear that in the case of using suction cups to climb a building, with no water or potatoes involved. I am not sure why it is not understood that our bodies are always pressurized from inside out to counter act 50,000 lbs of air pressure. Haven't you been in an airplane before with your ears popping? Seen astronauts in pressurized suits? The case for cutting cheese is a little different. Cheese happens to be a very good adhesive. To counter act air pressure and true adhesion, the cutter needs to be very minimal. A guitar cutter works well for cheese. dcarch

I believe that bones have no flavor. It is what's on the bones and inside the bones which make good stock. ( Yes, I have done a test). That's why I always crack bones in two when making stock. I also have found that Turkey parts make great "chicken" stock, and chicken hearts, some liver, gizzards make flavorful stocks, and they are cheap. dcarch

Not really. The same splitting force is needed for a 10*/10* double bevel regular knife edge as a 20* single bevel edge knife. That's the reason why I used a single bevel design. dcarch

I am the world's best expert when it comes to solutions for small living space. :-) When I was in college (NYC) I lived not far from school in a small one-space apartment. What is a one-space apartment? There was one living space and one kitchen, in the same space. The bath tub and toilet were in the kitchen. The only good thing was that the ceiling was very high. Have you seen the toy Transformer? That was my apartment. I used the school's shop to build all kinds of motorized convertible furniture, including platforms which drops down from the ceiling, etc. I became "famous" to other students who also had small apartments. I ended up helping many of them. My most famous invention to expand space: If you use glow-in-dark paint, which is colorless, to paint dots everywhere in a room, in total darkness, you will get the same sensation as if you are in infinity outer space floating with the stars. Far out! People where tripping out in my apartment. In physiology, in total darkness, you lost the ability to judge distance with point sources. dcarch

Depends on what you mean by "negate". The design of the knife takes advantage of all the factors discussed in this thread to prevent "vacuum" from developing between the blade and the potato slice. The only time you have to counter act atmospheric pressure is when your action creates a vacuum. Vacuum by definition (on earth) = -14.7 lbs/ sq. in. The video demonstrates "peeling" allows air to leak in between surfaces, in the video, frame 1.13 minute, , even the santoku knife can prevent potato from sticking if the potato slice is thin enough to curve away from the blade. The video also shows the difference of vertical v.s. horizontal force to remove the slice from the blade. The potato knife's thin blade with single bevel edge grind "peels" the slices away and never allow vacuum to develop. dcarch

As I promised, I am posting a video of a knife I designed and made which prevents potatoes from sticking to the blade. The design is based on my understanding of the physics and mechanics of slicing a potato or similar vegetables. The knife needs some sharpening. I have not done that for a long time. Perhaps this will answer part of OP's question? dcarch

If the question is about ceiling height, there is a building Code requirement for that. I don't know what is the minimum allowed. The picture looks cramped perhaps that comes with a small apartment, My suggestions in the picture added nothing which takes up more floor space or more volume. Speaking of Building Code requirement, my suggestion of using found space between wall studs should not be done on exterior hallway walls. Hallway wall s are sometimes structural, and always Code required fire walls. dcarch

Not sure why you feel it's claustrophobic. Depending on where you are, real estate is very expensive per square inch. Finding extra space is like winning a small Lottery. This will allow you to free up cabinet room to put away all other stuff. Spice gallery on wall can be very decorative. The inclining bookshelf on the right, use one or two shelves for books, and the others for display of interesting antique cookware will create a nice atmosphere for a "foodie's" apartment. dcarch

Excellent questions! Because you are a lousy potatoes dauphinoise maker. ( Haha kidding!) The dauphinoise is not rigid and is not evenly weighted. Part of it will sag creating the peeling action to allow air to leak in between potato slices and atmospheric force is equalized to allow gravity to pull the slices down. Those few slices remain on the plate is because they are much lighter in weigh to create the peeling action. dcarch

And that is exactly to be expected, as i have explained many many times. The condition obeys exactly the law of physics about no work is needed against a vertical force. It is in every General Physics 101 book. I see a lot of misunderstanding here to distinguish the vector of force and work. Horizontal sliding and vertical pulling proves very different theories. dcarch

You are correct that oil decreases surface tension of water. That's why I suggest to try all the experiments with soapy water, You will find out the surface tension of water has nothing to do with why two closely positioned together are very difficult to be pulled apart. It is indeed strange that so many other experiments involving no water and no potatoes are not good enough to proof that there is atmospheric pressure. I mentioned about viscosity, and Rynold's Number. It all has to do with viscosity. Air has very little viscosity. It flows quickly. The purpose of that one small drop of water in between two sheets of glass is because water has much higher viscosity to prevent air from leaking in between to two sheets of glass. Please, please, please try to understand the theory of hydraulics, read it thoroughly, if you don't do this homework, you will forever believe that water adhesive is stronger than 14.7 lbs/sq. in. The moment air leaks into the space between the two sheets of glass, instantly, based on the law of hydraulics, atmospheric pressure is neutralized, and the glass sheet can be separated easily. Oil, depends on water kind of oil, is higher in viscosity than water and will make it even more difficult to separate the glass sheets. dcarch

The follow picture shows what I have done for my place and what I have suggested to friends before. Lots of spaces in walls between studs not used. Lots of space inside the drop ceiling between ducts and conduits and pipes. There may be space for a closet between the washer dryer and the hallway wall also. Shop a a carpenter, may not be as expensive as you think. Will increase value of your apartment significantly. dcarch

Not sure what you are trying to say or prove. Oil will have the same effect in the conditions discussed above. Except you just introduced a new factor, i.e. viscosity. Viscosity in physics needs to work with Reynolds numbers. dcarch

I am not sure there is a way, not a single way. Atmospheric pressure is known for centuries. It's effects are well documented. It is everywhere, and it effects everything. Potatoes, other vegetables, and foods are all different in stiffness, surface texture, and surface area. Temperature, your cutting habits and different knives, etc. The combinations and permutations are endless. That said, regarding the OP's question, I do have a couple of ideas. 1. Granton knives can work sometimes for some potatoes, not all the situations. Dimples can help and can also e a problem. They can release pressure as well as act exactly like a suction cup. 2. Single bevel less acute edge angle knife is very good to allow the slices to peel away. 3. Try cutting under dripping water. 4. Try a knife that has thick blade and narrow width. When I get a chance, I will post a picture of a knife I use which basically eliminate sticking. dcarch
