    Knife techniques

    Unless you work for a restaurant or a food supply business, there is no need to be fancy with knife skills. All the cutting onions 10 lbs in 10 seconds can be impressive, but no practical use in a normal kitchen. Rocking motion, slicing motion all can work well. The only skill you need is to keep your fingers away from the sharp end of the knife. That said, do watch a few youtube videos and practice whatever you feel can be relevant to your typical recipes and eating habits. dcarch

  5. If the size of the suction cup is 3" x 3", under ideal conditions, the maximum force it can resist is up to about 132 lbs, unless glue is used. dcarch
  6. To secure this one: Westmark Multipurpose Rotary Cheese Grater 1. Get a piece of 1/4" thick plastic that is bigger than the machine's suction base. ($5.00?) 2. Rough up the plastic surface with fine sandpaper. Use Crazy glue to glue the suction cup to the plastic. ($2.00?) 3. Buy a couple of clamps to clamp the plastic to your work surface.   7. Good question. This is how I have been doing it: 1. The cracked end up. This is the end the sprouting and rooting happens. 2. You can't tell whether it's the right side or the left side of the crack where the root and sprout come out, so I plant the fruit vertical. 3. Once I can see which side the roots come out, then I plant them sideways. And by the way, chayote squash is worth planting because you can eat the fruits as well as the leaves. You can get up to 150 fruits per plant. dcarch

  13. Not to disagree. Just to have a total picture: Pasteurization and spending $3,350,000,000,000 annually in healthcare here in the USA have saved lives. In the old old days, healthcare spending = a little more than $0.00 annually. dcarch

  15. Actually, my method involves pressure steaming. The meat/bones are in a smaller pot inside the pressure cooker, to be pressure steamed. You can damage the PC if you cook without water. dcarch

  17. There are no good looking mats. You have gone thru a lot to have such a lovely wood floor, why mess it up with mats? Just get non-slip wood finish for the floor. dcarch
  18. It would not be shorts of the relays or switches which connect the power to the heating elements. Possibly some cooking liquid spilled/leaked to the indicator lights contacts. Those lights operate at very low electric current. The salt in cooking liquid makes connection to power and provides that little power to keep those lights on. Sometime the problem goes away after a while. I would not recommend fixing it yourself unless you have experience with working with electric power. dcarch

  21. I don't know how clean you can get vegetable by washing and brushing. Yes, you can get a lot of visible dirt rubbed away, but plenty of germs will still be there. How many angels can dance on the head of a pin? How many bacteria can fit on the pointy end of a pin? about 150,000.   23. May be I am doing something wrong. I don't seal my bags. So once in a while I can check what's doing inside the bags or add more seasonings. I reuse my bags. I wash them in my clothes washer when I have an accumulation. dcarch
  24. There can be a big difference between the two. Let say both are 1,000 watts. All the 1,000 watts from the induction will go into heating up the cookware. With resistance heating element, 1/2 of the 1,000 watts is wasted into radiant heat in heating up your kitchen instead of the cookware. dcarch
