It worked for me the second time. I've updated the confit thread with my technique

]onion confit This is what it looked like the second time. This time, I left the slow cooker on high for the first 8 hours. After that I turned it down to low. All in all, it took about 15 hours for it to come to this consistancy. I did stir it every now and then.

The confit is very good. It is quite a dense flavour, and again, I think it's because of the demi glace. The other night we had put some on a crusty french loaf. I've got a nice brie I'm going to bake on Sat (we're having company) and serve it with toast points and the confit. And I'm planning on a french onion soup and I may put some of it in there

No, no, bananas in milk, and coffee to drink

Hump day. Everyone moves slowly this morning, including me. Coffee, I need more coffee . I have this wonderful coffee maker, a Cusinart Grind and Brew Thermal Carafe. I make several pots of freshly ground coffee everyday. I aslo have a giant coffee mug I bought in New York on my recent trip and today, it just seemed appropriate. Breatfast for the troops this morning: Don had bananas in milk and coffee. I just can't think about food right now, so I'm sticking with my coffee and smokes for now. Ryan had: Krispy Kreme doughnut. Bananas in milk. Cereal with no milk (I just don't understand how he can eat this stuff dry). And milk to drink. He's now at the Centre where they were wheeling out cinammon toast and fruit as I left Today for lunch he got: A ham sandwhich - no butter, mustard or cheese please , a banana, a monkey bread muffin, a hunk of cheddar cheese, a small bag of mixed munchies (corn chips, pretzels, etc), a Mrs. Field's cookie and a Fruit cup. A juice box and a Koolaid jammer. I'm just about to start the Chili for tonight's dinner. I'll put the recipe in the archive later and post a link. I like to let my chili simmer for most of the day. I'm going to clean the other oven today, and re-organize my pantry. NOt the one in the kitchen. We actually have two other pantrys (to go along with the other two fridges, and freezers that we have ). Don is a firm believer in being prepared in case "the big one hits". So downstairs, we have lots of bulk and canned items, and upstairs in the laundry room I keep stuff I use on a regular basis, like oils and stuff. Being self employed gives me the luxury of making my own schedule, so I don't have a lot of client stuff this week. I've had a couple of meetings at the school for volunteer stuff, and apparently Ryan's class is tapped for cupcakes on Friday for cupcake day. Guess who's making cupcakes tomorrow?

I really like their horseradish mayo, and their Raisin Bran cereal has lots more raisins than the "other" brand.

If you don't do your homework, it will show very quickly - and the most expensive pen in the world won't save you

Yay! I passed my theory. And even better, no theory for next week, just 4 new songs Today was just too rushed to cook. Other than to make coffee, I don't think I touched a pot or pan all day. Since I still had to feed the lad, we did in fact order pizza. Ok I'm a failure as a mother ]Really bad garlic bread pizza Cinnamon twists. These actually weren't that bad, considering. I love Victoria! And by the way, welcome to eG! The name of the protein drink I use is called Lean Body. It comes in chocolate, vanilla or strawberry, but I prefer the strawberry. I'm a firm believe in feeding kids, so I hve lots of Ryan's friends over here on the weekend to clean out my fridge usually too

I'm not very tall either. I had them extend the cabinets to come to the edge of the top of the fridge, and then slot them. I keep most of my serving trays in their boxes and this was a great way to store them, and be able to reach them too. I'll take a pic and get hubby to upoad it to the pc later

I am a fan of President's Choice brand, although for food rather than knives I just think some of their stuff tastes better.

When we re-did our kitchen, I had the cabinet maker divide the cupboards over the fridge into slots. That's where all my baking trays, and serving dishes that I store in boxes go. Neatly ordered and easy to reach. I shall take a picture if you like so you can see what I mean!

Varmint - How about crawfish or shrimp! Nearly impossible to mess up and nice and expensive. Before you do that, check for seafood or shellfish allergies!

We're getting ready for a road trip in our RV. We're heading towards Nashville with a few stops along the way, including the Mammoth Caves (not for me, I hate caves) We'll be leaving next Thursday so we've a bit of time yet. The thing is, crossing the border in an RV is a bit of a pain because we can't bring any meat or dairy products with us. Where we cross will depend on what RV sites are open this time of year. It will either be Port Huron or Buffalo I suspect. Port Huron is the preferred crossing, but I haven't found an RV site that's open yet at this time of year. Anyone have any ideas on where to stop for groceries after either of these border crossings? Preferably one that doesn't require us to drive the rig through Main Street, USA. Something just off the highway would be great.

The joy of self cleaning ovens. I can clean my oven and still hang out on eGullet while I do it! Piano theory is done except for the D major scale inversion. I just can't figure that one out. So I'm consoling myself with some Miss Vickie's chips and contemplating making another pot of coffee. I live on coffee during the day. I haven't even thought about dinner tonight. Ryan has tutoring after school, homework, and then we both have music lessons. I see a pizza in our dinner future

Ryan gets up early and for all his protestations that he's not tired when he goes to bed, none of his friends go to bed that early, etc, he's alseep within 2 minutes of his head hitting the pillow. Koolaid jammers are drink pouches rather than boxes. They are his new favourite drink which will last right up until I go buy them in bulk, - then he won't like them anymore It's funny how kid's fears express themselves. Not that you'd ever find Ryan worrying about homework! He tends to keep things to himself. I alway know though, because he generally has a pretty sunny disposition. When he gets surly, I can be pretty sure that something is bothering him. Usually to be divulged at bedtime over a mug of warm milk. I just got home from the gym, and am finishing my protein drink, to be followed by some of the beef stroganoff leftovers from last night. Gotta clean that oven today too (fortunately, I have two ovens ).

I hate mornings. Ok, well I don't really hate mornings, I just hate the mornings when I have to get the lad up. Ryan was unusually hard to get up this morning, and of course he had to have his shower (at least I have the cleanest kid on the block). Don also had a later meeting here in town this morning, which meant he got going later than usual as well, managing to throw my entire morning routine off . When Ryan finally became coherent, he declared his preference for a Krispy Kreme doughnut for breakfast. That's it? How about a banana with that? And a glass of milk. While Ryan had his shower, I got his lunch together. - Ever notice how hard it is to get kids into the shower, but once they're in there, impossible to get them out? No lunchables today. For lunch he's taking a ham, mustard and cheddar cheese sandwich, 2 Monkey Bread muffins, (one to share with his friend), a cheese stick, fruit cup, Mrs. Field's cookie an apple juice box, a Koolaid jammer and he'll get his milk as well. Ryan also goes to a program before and after school. The daycare is located inside the school and he's been going there since he was two. This will be his last year in the program, and for the last year, he's been fulfilling a Jr. Leader role, in which he helps with the programing and the younger kids. They also provide snack in the morning and after school, although their idea of a "snack" is usually a full meal. More opportunity for Ryan to graze. Once he's done the program, he enters that twilight world. Too old for a babysitter, to young to stay home for any length of time by himself, and too young to get a job . I could have sworn he was just a baby yesterday Back to breakfast. Don ate the last of the blueberry muffins this morning, and since I still have blueberries in the fridge to use up, I'll make another batch today sometime. Today is a gym day. 40 minutes of running, 60 minutes of weight training. I had a piece of cinammon toast this morning, with many cups of coffee. I'll take a high protein, low carb shake with me to the gym. See you later in the day!
