  1. Hi Everyone, I'm going to be purchasing a Confectionary slicer or Guitar after the holidays. Pastrychef.com has 2 models. One for $1999.99 and the other for $1899.99. Does anyone have one and if you do where did you buy yours? Is it worth the money? Was is difficult to operate? Sorry for all the questions. I just want to make sure I'm buying something that I won't regret later. I've been lucky with my Little Dipper. It's works great! Any thoughts are much appreciated!   2. Hi Loir, I like the dipping fork. Do you know where they got the fork at? I have many but not like that one.....How do you like your mol 'd art machine? I'm thinking of getting a second melter. I already have a Little Dipper but need one for milk chocolate.. The pics are great! Thanks, Rena
  3. If you are that passionate about your baking then go for it. What do you got to lose. I just now figured out what I want to do and that is being a chocolateir. Weather it be working for someone or opening my own place, I just want to make chocolate confections. I to page thru all the books and dream up different things I can make. I'm 52 years old so don't ever think you are too late to start at anything. Follow your dream and keeps us posted. Rena

  5. Hi All, This is my second post. I just joned Egullet last week. I've reading the posts for a couple of months and decided what the heck may as well join! I'm a home chocolatrier. I don't have my own business but I do sell to family and friends and there family and friends. I recently purchased Peter Grewelings book and it's just fantastic!! I have Roger Geerts book and Pierre Wybauw too. I'm going to attempt to make Sleeping Beauties this weekend. I bought all the ingredeients including powdered milk. My question is the powder milk I bought in non fat. Is that ok? Thanks in advance! Rena
  6. I made a nutella dessert this past weekend. It's was like the deli wraps using flour tortillas. I got cream cheese and sweetned it with 1 tablespoon of vanilla and a 1/4 cup of powdered sugar. I smered that onto a regular flour tortilla and then spread the nutella on top of that. Then I put sliced bananas accross the torts and rolled it up. It actually tasted quite good after it sat for a while. Rena
