  1. asked Tony Bourdain , when he was in Austin, if he has ever eaten at Rao's. He got this funny look on his face and said, "That's the only place in the whole world where I can't get a reservation."

    Jesus! WHO EVER discovered that place??!! What a find--maybe the most amazing fucking meal I've had since..since..I dunnno. It makes Rao's look like Carmine's for accessibility. Food like that in the back of what? A wrecking yard? The "dining room" looked like a half a Conex container-andI KNOW that the bathroom I hadda walk all that way to was a fuckin PortaSan!
  2. I have some lovely fresh Mahi Mahi (Dorado, Dolphin FISH) filets from a fisherman friend. Would putting them in a shallow pan in a very low oven with the butter accomplish the same thing? I am really wanting to try this.

    Do this: Crust the mahi mahi with crushed macadamian nuts and saute in butter/evoo. Thank me later.

    Maybe it was a four-pack. They have those you know. For the really really good beers. They dont want to give you too much since it so good... :smile:

    You never find really bad beer come in 4 paks - its usually by the case...

  4. After all the joking about Keith Famie's Adventures in Cooking...I do own it. I own all three of his cookbooks. So far everything I have made has been exceptional. I have yet to go wrong with one of his recipes

    Im sure Keith would really appreciate your complimentary comments...I just cant get myself to buy those books...

    I recall when Chef Patrick Clark passed away with no insurance for his family and a book was issued to help the family....Very sad...

  6. We were offered some Monkfish liver today from my main fish guy, and as i had read about it here, i said hell yeah, send us a couple of lbs to play with. 

    David found it in the fish fridge, and sauteed some , served it on some mixed leaves, splash of balsamic/EVOO and some crisp parma ham.Tasted pretty dam good 

    Sounds awesome!

    Did you have it as a featured item on your menu? Or was this just for your greedy little appetite? I thought the CUSTOMER comes first! :raz:
