  1. Chris, how do you attach this cake cutter to the bowl? Are the bottoms of your chocolate coated nicely? I hate when mine aren't coated perfectly on the bottom and it is often an issue! Thanks!

    Dulce de Leche

Alfajoras - I spelled it incorrectly! It is an Argentinam cookie- I think made with corn starch in addition to regular wheat flour. It is a sandwich cookie with DDL in the middle. Itis very light and fluffy and then the side are rolled in toasted coconut.
  5. I am glad it made someone smile! I liked them! People are amazing with their creativity and patience as well as interests!
  6. Nice!! Enjoy them! Here i onlyuse them for my S'mores as everyone thinks they are too sweet- my little one syas they are toosweet and prefers the store bought ones!!! right!

    Dulce de Leche

No I haven't tried it yet but I will tomorrow. There isn't much to lose! And I will try it from scratch also. The vanilla bean goes in whole- not cut at all? I think part of the crunchiness was all the seeds (yeah I know... excuses excuses!). My next effort after perfecting DDL will be alphahoras! Any good recipes?!

    Dulce de Leche

How interesting! Here full cream milk is 3%. Si yes, I did use your recipe-thank you once again! I also used goat's milk as recommended, but that is under 4%- I don't remember how much. I used a bain marie but couldn't get a boil going. SO I then poured into a pot and continued. I do not know when to stop either- by color, by texture? aLSO, how or when do you strain to get rid of the vanilla seeds? They also add a crunch- which I like but others don't realize it is from vanilla. Oh, the thickness? Thicker than bought jars of it, not anywhere near as smooth and a bit darker in color. Can I still correct it??!! We did a blind tasting test in the family of 2 bought brands and mine. Mine came in 3rd all the time!

    Dulce de Leche

Hi!! Well about an hour north of me- same as where the specialty stores are. I guess I will go and stock up one of these days, and get other things to make life easier- like bought invert, glucose and corn syrup... Thanks for the idea though. Sorry for asking but Asian, meaning from China, Taiwan, Japan, etc right?
  11. I thought these Foodscapes were lovely and wanted to share.

    Dulce de Leche

Thanks Sebastien! I know about the condensed milk way-although Ihtough 2 hours was the time required. Anyway, I have difficultyfinding condensed milk here. The supermarkets carry one that has added vegetable oils and it is YUCKY!! So anyway, 3 hours? Okay Iwill goto aspecialtystore to see if they carry condensed milk. I still want to get it right the authentic way. Hongda thanks- I will check that link!

    Airplane mold

Hi ! Yes I spoke with CHocolate world about that mould. Now getting other transport businesses involved is creative thinking!!! And "Spring" yes, MR Cake carries cabrellon molds and that jet plane mold too. I guess I will have to go north to Natanya toseeit. Itis weird- the moldis 7.5cm X6.1 cm and only weighs 8 grams and is a single mold. I guess it is skinny. The saleslady said it could be filled with ganache, but that seems a bit painful-no?

    Airplane mold

oh dear! Searching for these molds I came across such weird molds that Ikept thinking, "now if they could make that, why isn't there exactly what I need!!" There are PVC erotic molds of every part of the body to the last detail, ploycarb molds of boots and shoes and clogs. A lighthouse, a windmill, something that looks like the blade of a knife (....) who knows what it is, all I want is a nice small plane.

    Airplane mold

Yes I also saw the jet plane and I had the same picky feelings! I need small cuddly ones! I need a qaulity set of molds if this is to be a monthly order of 100 -200 airplanes and a lot of those molds are PVC. I tried to look at that sight but it is in Japenese. I assume it is a PVC mold. What a cute idea about a 3D cockpit and marshmellow clouds!! Could you ask them what mold it is -PVC? I can't write to them or find where to contact!! Thanks so much!!!

    Airplane mold

Exactly. I do understand the reason you chose red though!
  19. I think either the 8 week course in Solingen- Germany. Or perhaps the Culinary school in Switzerland. Of course, another parameter, besides money and location, would be time!!

    Airplane mold

Well I have cream silk paper- I will give it an experiment- using something else for the planes! Thanks for the idea!

    Airplane mold

Well he wants each person to have two chocolates I suppose. I wouldnot want to spoil the romantic flight by a fight over one plane!!! This is exactly what I thought- a heart and a plane on top- but this is a custom made mold +$$$ Such silly business!! Why isn't there exactly what I need? Humph!

    Airplane mold

Thank you so much!! I found a polycarb mold at Cabrellon. It seems a bit bigger than I thought and I think it is the same as one of your links. I will pass it by the "pilot" for approvable! He wants hearts as well and so the problem. Two hearts and 2 airplanes- but the airplanes are much bigger in size than the hearts... So I need a larger box- which I have, however, then there is extra space by the hearts!! So perhaps I need bigger hearts... bigger chocolates, more cost,... more cost, higher price, ...higher price, unhappy pilot... HELP!
  23. Thank you!!!! I will correct it! Also thanks for the airplane mold links!
