First thing is i didn't think manta ray is edible but maybe im wrong. Anyqway manta ray skin is black and skate's skin is gray. As to the question of how many of us have had skate less then 10 hours old? ME I catch them off the beach all the time. Fresh there is no amonia smell or taste to my knowledge. None that i ever experienced. We cook it many different ways in my family. On the bone usualy but i love it aoff the bone as well. Its easy to eat on the bone because it all slides off the bone. But i eat the hole thing since the bones are edible and have a nice crunch factor. But thats just me. Now french have a theory on skate. They say it should be aged 2-3 days before its eaten. I personally disagree and still say fresh is best.

not only do i not trust the zagat restaurant guide all that much but, there ny marketplace guide is worse. They7 have all thye wrong information in there. Wrong adresses and bad reviews. But thats just my experiences.

one of my chefs made a terrine out of it. I didnt care for it that much but it was the only time i ate monkfish liver. it might be better another way

Now this is a question i ask most chefs i talk to. I am a huge fan of japanese knives. I dont think any other maker can even touch them. How do you feel about knives. Which do you guys prefer? For what reasons?

And im saying it is imposible for that polenta cake to shoot off the plate. Ive experienced that exact polenta cake and you would have to leave it in the oven for an hour to make it hard like she said. The bread i dont have an answer for maybe it happened maybe it didn't. But like i said before maybe its just me and my opinion. But ill stick to my guns because i know what i know, enough said. Its my opinion everyone else has to come up with theirs. Karla Cook has the right to hers thats her job right, we just have to see what evryone else sais you know.

Does anyone know where i can go peach and necterine picking. The place i usually go eastmont orchards is having trouble with there fruit this year i think it was the weather or didease im not sure. I do know it must be an epidemic because another farm called trauchirer(sp) farm is also not picking this year i think because of a bad crop as well. Does anyone know of anywhere else to go and if this epidemic is hitting the whole state?

Kim hit the nail on the head almost she forgot one thing. Its got to be a taylor ham, egg, and cheese. The drink i like gatorade myself but like kim said water after.

i was in vegas 10 months ago and cheap wasn't a word i would use for any food there. Especially now with all the big names that are going out there. there are some high class restaurants out there now and you pay some high class prices for it. This chick went to a restaurant that was something like fridays i know i dont want to go to fridays on my vacation

does anyone else hate that show 40$ and under or whatever its called. This girl ate in las vegas leaving a 25 cent tip for dinner. I think she may have been escorted out of las vegas for doing something like that. The show is just so unrealistic to me.

Does anyone know if the august edition has come out yet? I heard that it did and that its the restaurant edition but i haven't seen it around. The website seems like it still has the july addition. Can anyone share some information.

All friends aside do i think the frod and the peach would have recieved 2 or 3 stars from grimes? i do agree about grimes being a tougher scorer in NY. I think its alot harder to gain three stars in the city then to get 3 STARS oh wait i mean excellent in nj. So in my opinion do i think the frog and the peach would get three stars if it were in ny. I think the food would make it but i dont think the service is quite special enough for it to be considered a 3 star ny restaurant. Now dont get me wrong thr service is very good but when you look at the three star plaves in ny is it the same probably not. But do i believe they deserve an excellent in nj you bet your ass. I think they are one of the best places in nj. But i am only one man. Everyone else has to go and come up with thier own opinion.

i went to cooking school to play baseball so maybe im a good subject for this question. I really dont think it matters school no school. i think the only thing that seperates a good cook and a bad cook are a passion for the job and for food. You can walk into a kicthen and not know a thing but someone with a passion to learn will know alot more then when he walked in that day. As far as cooking school goes i think most of them are bullshit. I graduated with kids that thought they were the best thing that happened to the kitchen but i know they wont last a week. Like i said its all about what you take out of it and how much you love it

a couple words about british food shows "TWO FAT LADIES" Enough said on that. But i agree follow taht food was preety interesting when it first came out now im getting a little tired of it. Its still better then door knock dinners or whatever it was. I like some of the new shows i still love iron chef, i hate Bobby gay, i want to BAM Emeril off the face of teh planet. But thats just my take. I do however second the notion to kill roonie

hello, I am going to chicago for three days starting monday. I am going to eat at trotters, tru, and tropolombombo. I need to find a couple small places for lunch but since the others are going to brake the bank, they cant be in the others price range. Anyone have any ideas?
